Mini Valentine Cookie Cakes are a perfect way to say I love you. Soft, chewy and irresistible cookie cake with chocolate, sprinkles and frosting. This combination together makes it so hard to have just one bite. You may want to make your Mini Valentine Cookie Cakes even smaller, so that you know when to stop eating!

You are going to love making Mini Valentine Cookie Cakes, you can make them for Valentines or a special event or even in place of a birthday cake. Use your imagination and decorate them any way you want.

I had to laugh, I gave one of the cookies to my sons family because I had my grand daughters help me decorate it, and my daughter-in-law told me that it was so yummy she had to put it away so she didn’t eat the whole thing. The frosting makes the cookie so nice and soft, if you make the cookie ahead of time, you may want to wait to frost it until the day you are serving it.

  • You could use less of the dough for each cookie cake (such as divide the dough in half and make 2 cookie cakes instead of 1). (Make sure to adjust the cooking time down so your cookie cakes do not burn).
  • Use a bigger heart shaped pan and spread the dough thinner in the pan. (Make sure to adjust the cooking time down so your cookie cake does not burn).
