How Do I Make Italian Cream Cake?

Cake
- Cream together margarine and shortening.
- Add sugar and egg yolks; mix well.
- Combine flour and soda, then add alternately with buttermilk to first mixture.
- Add vanilla, coconut, and nuts.
- Fold in stiffly beaten egg whites last.
- Bake in Two 9″ round pans, at 350 degrees for 35 – 40 minutes.
Frosting
- Mix cream cheese and butter until creamy.
- Add powdered sugar and vanilla; beat until smooth.
- Spread on cooled cake.
- Sprinkle nuts on top of frosting for garnishing.
I made this particular cake for my oldest daughter’s birthday, at her request. Our family has always had a family tradition of having a birthday cake on your birthday. When my children were younger, sometimes they picked out the cake and I made it, or sometimes I just surprised them.
I have found that now that my children are older, they still appreciate mother making them a birthday cake! My son-in-law was supposed to bring Strawberry Ice Cream to go with the cake, but he accidentally got Strawberries & Cream so everything was very creamy! - 5 egg yolks
- 2 cups flour
- 1 cup buttermilk

- 1 cup coconut
- 5 egg whites, stiffly beaten
- 1 cup chopped nuts (pecans or walnuts)
- 1 teaspoon baking soda

- 8 ounces softened cream cheese
- 1/4 cup softened butter
- 1 pound powdered sugar
- 1 teaspoon vanilla
- 1/2 cup chopped nuts
