How Do I Make Italian Cream Cake?

Cake

  • Cream together margarine and shortening.
  • Add sugar and egg yolks; mix well.
  • Combine flour and soda, then add alternately with buttermilk to first mixture.
  • Add vanilla, coconut, and nuts.
  • Fold in stiffly beaten egg whites last.
  • Bake in Two 9″ round pans, at 350 degrees for 35 – 40 minutes.

 

Frosting

  • Mix cream cheese and butter until creamy.
  • Add powdered sugar and vanilla; beat until smooth.
  • Spread on cooled cake.
  • Sprinkle nuts on top of frosting for garnishing.

 

I made this particular cake for my oldest daughter’s birthday, at her request.  Our family has always had a family tradition of having a birthday cake on your birthday.  When my children were younger, sometimes they picked out the cake and I made it, or sometimes I just surprised them.

 

I have found that now that my children are older, they still appreciate mother making them a birthday cake!  My son-in-law was supposed to bring Strawberry Ice Cream to go with the cake, but he accidentally got Strawberries & Cream so everything was very creamy!  My daughter loved it and we all had an enjoyable time. Hopefully, you will be able to make this cake, share it, and make some memories like we were able to.  After all, memories are a big part of what makes food so special.

  • 2 cups sugar
  • 5 egg yolks
  • 2 cups flour
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 cup coconut
  • 5 egg whites, stiffly beaten
  • 1 cup chopped nuts (pecans or walnuts)
  • 1 teaspoon baking soda

Frosting

  • 8 ounces softened cream cheese
  • 1/4 cup softened butter
  • 1 pound powdered sugar
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts

Instructions
