Black bean and Pumpkin Chili is a wonderful dinner for those little Trick-or Treaters. Packed with flavor and healthy vegetables and the taste is fantastic!!

My husband tells me that he doesn’t care for pumpkin, but no one even knows that there is pumpkin in this delicious black bean and pumpkin chili.

Sometimes when I make pumpkin cookies or pumpkin chocolate chip muffins or even pumpkin pie dessert, I open a large can of pumpkin because I know that there is something else that I will love to add more pumpkin to.

  • In a large skillet, place the oil, and then add the onion and pepper; sauté over medium heat. Then add in the garlic and cook for an additional minute.
  • Place the vegetables from the skillet into a slow cooker.
  • Then add black beans, solid-pack pumpkin, tomatoes, chicken broth, chicken, parsley flakes, chili powder, cumin, oregano, and salt.

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 medium yellow, orange, or red pepper, chopped

  • 2 cans (15 ounces each) black beans, rinsed and drained
  • 1 can (15 ounces) solid-pack pumpkin
  • 1 can (14 1/2 ounces) diced tomatoes, undrained
  • 3 cups chicken broth
  • 2 1/2 cups cubed cooked chicken
  • 2 teaspoons dried parsley flakes
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin

  • Cubed avocado and thinly sliced green onions, optional
