Amazing Apple Pie Cookies are such a wonderful treat for fall. It will soon be Thanksgiving and these Amazing Apple Pie Cookies would be great in place of a slice of apple pie.

I like to put the pie filling on about 1 hour before serving, otherwise it makes your cookie go very soft.  Also for an added bonus, add a squirt or dollop of whipped cream and just a sprinkle of nutmeg if you like.

  • Butter

How Do I Make Amazing Apple Pie Cookies?

Here’s the simple steps you’ll follow to make these cookies (scroll down for the full recipe):

 

Cookies:

  • In a medium bowl, mix together the butter and brown sugar until nice and creamy.
  • Next add the eggs, honey, and vanilla extract, mix to combine.
  • Then add the flour, cinnamon, nutmeg corn starch, baking powder, salt, and quick oats.
  • Using a 1/8 cup or a 1/4 cup, roll them into balls and place them onto the prepared baking sheet.
  • Using the bottom of a glass, press the cookie down making a small indentation in the middle of the cookie.
  • Bake in a preheated oven for 12-14 minutes.
  • Remove the cookies from the oven.
  • Then after the cookies are cooled and ready to serve, place 2-3 teaspoons of apple pie filling in the center of the cookies.

Apple Pie Filling:

  • In a medium bowl, place the apples that have been peeled and thinly sliced.
  • Next, take 1/2 medium to large lemon and squeeze the juice over the apple slices, stir to coat.
  • In a separate pan, place the water, brown sugar, vanilla extract, corn starch, cinnamon, nutmeg ginger and all spice.
  • Place over medium heat and cook until the mixture comes to a boil; stir the whole time so that you do not get lumps.
  • Next add the apple slices after the mixture has thickened.
  • Cover the mixture and allow it to cook on low heat for 15-20 minutes.
  • Stir the mixture every 3-4 minutes.
  • Remove from heat and allow it to cool.

 

 

 

What Kind of Apples Should I Use to Make Apple Pie Cookies?

 

  • Granny smith is my preferred apple in these cookies because they hold their texture well. 
  • Honey Crisp and Fuji also work well.
  • Use any crunchy apple that you would like.

Apple pie cookies are loaded with juicy apples and all the spices and flavors of apple pie combined together, in cookie form.

Ingredients

Cookies:

  • 1 cup butter
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 2 1/2 Tablespoons honey
  • 1 1/2 teaspoons vanilla extract
  • 2 3/4 cup all purpose flour
  • 1 1/4 teaspoons cinnamon
  • 1/8 teaspoon nutmeg
  • 2 Tablespoons corn starch
  • 2 teaspoons baking powder
  • 1/3 teaspoon salt
  • 2/3 cup quick oats

Apple Pie Filling:

  • 4 medium apples, peeled and thinly sliced; I like granny smith or any crunchy apple
  • Juice squeezed from 1/2 lemon
  • 2 cups water
  • 2/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 Tablespoon corn starch
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/8 teaspoon all spice

Instructions

    Cookies:
