Honey Roasted Garlic Carrots are a perfect side for a special meal. They will be on our Thanksgiving table this year. They are sweet and yet somewhat healthy.  

Even though they have garlic in them, they do not make your breath smell like garlic. Believe me I know garlic when I smell it. Even better, if you do not want garlic, go ahead and add 1/4 teaspoon of cinnamon with 1 teaspoon of brown sugar on your carrots.  They are great that way too.

How Do I Make Honey Roasted Garlic Carrots?

Here’s the simple steps you’ll follow to make these carrots (scroll down for the full recipe):

 

  • Peel the carrots and then trim the ends off.
  • Cut into 3rds or 4ths.
  • Melt the butter in a medium pan, over medium heat.
  • Next place the honey into the butter and stir until the mixture is combined.
  • Add the garlic and cook for about a half of minute.
  • Place the prepared carrots in the sauce; stir for 1 – 2 minutes allowing the sauce to thicken while coating the carrots.
  • Season with the salt and pepper.
  • Next place the carrots onto a baking sheet, single layer.
  • Place in the oven for 20 minutes.
  • Season with extra salt and pepper.
  • Garnish with fresh parsley.

Honey Roasted Garlic Carrots

Honey roasted garlic carrots are a perfect addition to your Thanksgiving table. Flavorful honey roasted carrots are sweet and divine.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 2 Pounds carrots, washed and peeled
  • 1/3 cup butter
  • 3 - 4 Tablespoons honey
  • 3 garlic cloves, minced
  • 1/3 teaspoon salt (more if desired when serving)
  • Fresh cracked black pepper
  • 2 Tablespoons fresh chopped parsley

Instructions

  1. Preheat the oven to 425 degrees.
  2. Grease a large baking sheet with non cook spray.
  3. Peel the carrots and then trim the ends off.
  4. Cut into 3rds or 4ths.
  5. Melt the butter in a medium pan, over medium heat.
  6. Next place the honey into the butter and stir until the mixture is combined and the honey is melted.
  7. Add the garlic and cook for about a half of minute.
  8. Place the prepared carrots in the sauce; stir for 1 - 2 minutes allowing the sauce to thicken while coating the carrots.
  9. Season with the salt and pepper.
  10. Next place the carrots onto a baking sheet, single layer, as this allows the carrots to cook more evenly.
  11. Place in the oven for 20 minutes, or until the carrots are tender when you check them with a fork.
  12. If desired, you can broil then on high for an additional 2-3 minutes as this makes them a nice color; watch them so that they do not burn.
  13. Season with extra salt and pepper.
  14. Garnish with fresh parsley.
  15. If you want your sauce thicker, place your carrots back into the pan and place 1/2 teaspoon cornstarch along with 2 teaspoons cold water, then add this to the carrots. Cook over medium heat until the mixture is thicker.
