Grasshopper Cake is a favorite of mint lovers. That would be my third child and myself. My second child tells me that it tastes like toothpaste. I wish my toothpaste was that good.
I love mint ice cream too. How about you, do you love mint or what is your favorite kind of cake? There are so many kinds anymore. Gone are the days that there was only chocolate and vanilla.
When I grew up we always made cakes from scratch. Most everything we made was from scratch. I had older brothers and they would sneak in the dough no matter whether I made cake or cookies.
Now here is a story for you; my brother would cook up some frosting on the stove top and we would all eat it just like pudding.
He had to make the frosting on the stove top and use granulated sugar because we did not have powered sugar on hand that often. We would have preferred frosting made from powdered sugar, but we did with what we could find and figured out how to make it work.
We even got fancy and added cocoa sometimes so we had chocolate frosting instead of vanilla. It was so good. We only made it when my parents weren’t home.
One of us would watch from one side of the house and another one of us would watch from the other side just in case they came home. Ha ha, I bet most parents would be ecstatic if that is all they had to worry about with their kids now days.

- Chocolate cake mix
- Cream cheese
- Margarine
- Cornstarch
- Sweetened condensed milk
- Egg
- Mint extract
- Green food coloring
Frosting:
- Butter
- Confectioners sugar

- Andes mints for garnishing
- Mint Oreo cookies for garnishing
How Do I Make Grasshopper Cake?
Here’s the simple steps you’ll follow to make this cake (scroll down for the full recipe):
Cake:
- Make cake mix according to package directions.
- Pour into a 9″ X 13″ pan that has been greased and floured.
- In a small mixing bowl, beat cream cheese, margarine, and cornstarch. Mix until nice and fluffy.
- Gradually mix in the sweetened condensed milk.
- Add egg, mint extract, and green food coloring, then mix again.
- Pour this evenly over the cake dough that is in the pan.
- Bake @ 350 degrees for 40-50 minutes.
Frosting
- In a medium mixing bowl, combine butter, confectioners sugar, cocoa, milk, and vanilla, and mix.
- Garnish with crushed mint Oreo’s and Andes mints.
Okay so I just have to admit, sometimes cakes just plain stick and this is what they look like. Aren’t we so lucky that we have frosting and cookies to cover the cake up and wow, doesn’t this look amazing? The cake looks a lot different than before it was frosted. Next time I will be sure and grease and flour my pan; sometimes I get ahead of myself and this is what happens.
One thing that I have learned is that your food doesn’t always have to look perfect and it usually doesn’t. How you place it on the table or on a plate can make all the difference in the world. If you add some garnishments then that can cover up a few flaws. But I do know being the youngest of 9 we didn’t care how it looked, we knew that we better just hurry up and get some fast!!!
