Here is a fun new cookie for you.  They are named “good to the last one cookies” and you will find out why.  The buttery flavor comes out, but there are oats and cornflakes in them.  I also added some cinnamon chips, giving them just the right taste.

It is fun to have a change from the traditional cookies.  Your family or guests will be surprised to find out that they have cornflakes in them, adding a nice little crunch.  These good to the last one cookies are more of the texture of a short bread cookie.  And they don’t dry out, making them good to the last one.  However they usually don’t last very long.

What Ingredients Do I Need For Good To The Last One Cookies?

  • Brown sugar
  • Sugar
  • Butter
  • Coconut or vegetable oil
  • Salt
  • Vanilla
  • Egg
  • Flour
  • Baking soda
  • Cream of tartar
  • Coconut
  • Quick oats
  • Corn flakes
  • Cinnamon chips
  • Nuts, if desired

How Do I Make Good To The Last One Cookies?

  • In a large mixing bowl, combine sugars, butter, oil, salt, vanilla, and egg.
  • Mix well.
  • Add flour, soda, cream of tartar, coconut, oats and crushed corn flakes.
  • Fold in the cinnamon chips (and nuts, if desired).
  • Roll into 1″ balls and flatten with the bottom of a glass that has been dipped in sugar.
  • Bake @ 350 degrees for 8-10 minutes.

I usually love to bake on cloudy days and we have been having a lot of them.  The reason I bake is so that I can warm up.  It is funny how the house can be the same temperature as when the sun is shining, but it just feels colder.

So if I bake, it warms up the house just a little bit more. Plus, there is nothing like a warm cookie to warm you up.  These are a lot of fun, and maybe you can make a game out of guessing who can guess what is in the cookies.

I am pretty sure that you can eat these for breakfast since they have two different kinds of cereal.  Add a glass of milk, and you are set.  Ask your kids if they agree with me. Nothing better than oatmeal and cornflakes for breakfast.

You will love these good to the last one cookies. They are buttery tasting and soft and crisp at the same time. They have oatmeal and cornflakes in them.

Ingredients

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup butter or margarine, softened
  • 1 cup oil, coconut or vegetable
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 egg
  • 3 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1 cup coconut
  • 1 cup quick oats
  • 1 cup corn flakes, crushed
  • 1 cup cinnamon chips (I used Hershey's)
  • 1/2 cup nuts if desired, (pecans or walnuts)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine sugars, butter, oil, salt, vanilla, and egg.
  3. Mix well.
  4. Add flour, soda, cream of tartar, coconut, oats and crushed corn flakes, (measure corn flakes to 1 cup and then crush and add).
  5. Fold in the cinnamon chips (and nuts, if desired).
  6. Roll into 1" balls and flatten with the bottom of a glass that has been dipped in sugar.
  7. Bake for 8-10 minutes.
