Cheesecake Brownie Cupcakes with Frosting are amazing. The other day it was my daughter’s birthday. We decided to go the the park and enjoy a nice evening outside, playing frisbee golf. I decided that cupcakes would be easier to take and eat at the park.
I went to the store and grabbed 4 cake mixes because they were on sale. I came home and started to make the cupcakes and I thought that it was a little strange when my cupcakes were so thick. I added more water than the recipe called for and thought nothing of it until I tried to cook them for only 20 minutes. They weren’t even close to being done.
I went back to the box to see if I had done something wrong and then I realized the box said brownies on it. So I went ahead and frosted them just like I would birthday cupcakes and they were amazing. We all loved them.
So sometimes mistakes are good. I decided that someone had placed the brownie mixes in the wrong spot because my other boxes were all cake mixes.
What Ingredients Do I Need For Cheesecake Brownie Cupcakes with Frosting?
Brownies:
- Box Fudge Brownie mix
- Water
- Cooking Oil
- Eggs
Cream Cheese Mixture:
- Cream cheese
- Butter
- Cornstarch
- Sweetened Condensed Milk
- Egg
- Vanilla extract
Frosting:
- Butter
- Cocoa powder
- Powdered sugar
- Vanilla extract
- Milk
How Do I Make Cheesecake Brownie Cupcakes with Frosting?
Brownies:
- In a mixing bowl, make the brownies according to package directions, except add 1/4 cup water instead of 3 Tablespoons.
Cream Cheese Mixture:
- In a separate bowl, combine the cream cheese and the butter.
- Then add the cornstarch, mix in the sweetened condensed milk, egg, and the vanilla, and set to the side.
- Prepare a muffin tin by adding cupcake papers or spray the pan with cooking spray.
- Fill each muffin cup, about 1/2 full.
- Then on top of the brownie mix, add 2 Tablespoons of the Cream cheese mixture.
- Preheat the oven to 350 degrees.
- Place the brownies with the cream cheese mixture in the oven for 30-35 minutes.
- They look a little cracked, but they are fine; remove them from the oven and allow them to cool completely.
- Then you can eat them as they are, or go ahead and top with your favorite chocolate frosting.
Frosting:
- Place the butter into a mixing bowl, and mix until nice and fluffy.
- Add the powdered sugar, vanilla and about milk.
Can I Use a Cake Mix Instead of Brownie Mix?
- Yes, you can, you will just have to set your timer for them to bake less time.
- You can also use dark chocolate or milk chocolate, I used fudge brownie mix.
Do I Need to Frost my Cheesecake Brownie Cupcakes?
- No, I frosted mine because we were using them in place of a birthday cake.
- Cheesecake Brownie Cupcakes with Frosting are like Rocky Road Brownies, but maybe just a little richer. I will be making them again.
