Ingredients

  • 1 pound bacon, cooked and diced
  • 1 small onion, chopped
  • 6 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cottage cheese
  • 1 cup shredded Swiss cheese

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large skillet, cook bacon and onions over medium heat, cook until bacon is slightly crisp and then drain off the fat.
  3. In a large bowl add the eggs, hash browns, and the 3 cheeses.
  4. Then add the bacon mixture to the egg mixture.
  5. Grease a 9" x13" baking dish.
