- 3 eggs, beaten
- 2 teaspoons ground cinnamon
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 3 cups apples; peeled, and cut into squares (about 2 apples)
- 3/4 - 1 cup chopped pecans (optional)
Instructions
- Preheat the oven to 300 degrees.
- Grease or spray 2 loaf pans.
- In a mixing bowl, add the oil, sugars, eggs and cinnamon together.
- Next add the flour, baking soda, and salt.
- Last stir in the apples, (and pecans if adding).
- Place the dough into the pans by splitting it in half.
- Bake for 60 - 70 minutes.
- Cool for 5 - 7 minutes on a wire rack before removing the bread from the pans.
