Oatmeal cake is moist and dense, making it a perfect match for some vanilla ice cream.  This oatmeal cake is one of my son’s very favorite cakes, so I decided to make it for his birthday. We enjoy it because it has oatmeal in it, so it must be somewhat healthy right!?!

The frosting for this Oatmeal Cake is a lot like the German Chocolate cake frosting, other than you broil it, which makes it nice and crisp on the top. It is good to have a birthday in the family and not spend the entire day decorating a cake, like I use to do. However there are some pretty amazing cakes out there, that someday I will have to try making.

 

Oatmeal Cake

 

I think that it is time to discover some recipes for making cake in my slow cooker. I 1 1/2 times this cake yesterday, making enough for family and so it took longer to bake, 50 minutes with the oven on, and it really warmed up the house.

Also it was 90 degrees outside. I know that is cooler than some of you, but I think that I missed Spring. It would be so awesome to have about 3 months of nothing but 70 degrees. That’s okay we just need to learn to enjoy what we have. We are very blessed to have A/C and heat. Yep, I am spoiled.

What Ingredients Do I Need For Oatmeal Cake?

Here’s a list of ingredients you’ll need to make this Cake (scroll down for the full recipe):

 

Cake:

  • Quick or regular oats
  • Flour
  • Cinnamon
  • Baking soda
  • Salt
  • Butter
  • Brown sugar
  • Sugar
  • Eggs
  • Vanilla

 

Broiled Coconut Frosting:

  • Chopped walnuts
  • Flaked coconut
  • Butter
  • Vanilla
  • Brown sugar
  • Evaporated milk

 

 

How Do I Make Oatmeal Cake?

Here’s the simple steps you’ll follow to make this Cake (scroll down for the full recipe):

 

Cake:

  • Pour boiling water over oats. Let stand for 10 minutes.
  • In a separate bowl, combine flour, cinnamon, baking soda, and salt. Set aside.
  • With an electric mixer cream together butter, brown sugar and white sugar until light and fluffy. Add eggs, one at a time, beating well after each one. Add vanilla and mix again.
  • Then add the dry ingredients alternately with the oat mixture to creamed mixture, beating well after each addition, using low speed.
  • Place in a 9″ square baking pan that has been greased.
  • Bake in a 350 degrees for 35 minutes.
  • Frost warm cake with Broiled Coconut Frosting and broil following the directions below.
  • Cool in pan on rack.

 

Broiled Coconut Frosting:

  • Combine walnuts, coconut, butter, vanilla, brown sugar, and milk into a small sauce pan.
  • Cook over medium heat, stirring constantly, until butter melts.
  • Makes about 2 cups.
  • Spread frosting over top of cake in pan.
  • Broil 3″ from source of heat for 1 minute or until golden brown and bubbly.

 

 

 

Well my cute granddaughter was helping my son open his presents. I asked her if she could hand him his presents and she said “yep.” She took them over to him and whipped out tissue paper and pulled the gift out, handed him the gift, went and got the next gift and ripped out the tissue paper, pulled the shirt out of the bag and handed it to him.

Kids are so funny. They don’t even seem to care what the gift is, they just seem to like opening it! The gifts are very inviting when they are in a fancy bag or wrapped so beautiful. However when you are big, the gifts just aren’t very exciting like they are for the little ones.

Like my sister’s grandson said “grandma, money is not a present; money is money”. Kids are too smart and they want things; not money, and they usually don’t want clothes. I guess that what I’m trying to say is that birthdays are for wants, not needs, and if you want to be the favorite grandma, you better figure that one out soon. Ha ha. Now go have a piece of Oatmeal Cake.

Oatmeal cake is so moist and delicious. It is a heavier cake that goes together so well with some ice cream. It is perfect for any occasion.

Ingredients

  • 1 1/3 cups boiling water
  • 1 cup quick or regular oats
  • 1 1/3 cups all purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla

Broiled Coconut Frosting

  • 2/3 cup chopped walnuts
  • 2/3 cup flaked coconut
  • 1/4 cup butter
  • 1 tsp vanilla
  • 2/3 cup packed brown sugar
  • 3 Tbsp evaporated milk

Instructions

  1. Pour boiling water over oats. Let stand for 10 minutes.
  2. In a separate bowl, combine flour, cinnamon, baking soda, and salt. Set aside.
