How Do I Make Tex-Mex Chicken Bowls?

Here’s the simple steps you’ll follow to make these Chicken Bowls (scroll down for the full recipe):

 

Chicken Bowls:

  • In a small bowl, place onion powder, garlic powder, and the cumin. Mix them together.
  • Then in a skillet, place the oil and the chicken breasts; sprinkle the mixture on both sides of the chicken pieces. When the chicken is cooked you can either slice or dice it.

 

Toppings:

  • In 4 serving bowls, or how many you need, place the lettuce of your choice, or if you like cabbage, you can use that in it’s place.
  • Place the vegetables like chopped tomatoes, corn, chopped onions, sliced avocados or any that you enjoy, and the chicken on top of your lettuce.
  • Add cheese. Top with some chopped cilantro for garnishing.

Tex-Mex Chicken Bowls are healthy and delicious. We love that you can put them together quickly and there are so many options.

Ingredients

Chicken Bowls:

  • 2 pounds of boneless, skinless, chicken breasts or strips or Rotisserie
  • 2 - 3 Tablespoons olive oil
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons cumin

Toppings:

  • 3 cups lettuce or cabbage (Romaine, iceberg) (purple is fun for cabbage)
  • 2 tomatoes, chopped
  • 2 - 4 Tablespoons cilantro
  • 2 - 3 little green onions, chopped
  • 2 avocados, sliced
  • 1/2 cup cooked corn
  • 1 cup sharp cheese, (can use Mexican or any flavor you like)

*Optional:

  • Black or Kidney Beans
  • Sour Cream or Yogurt
  • Guacamole
  • Salsa

Instructions

Chicken Bowls:

  1. In a small bowl, place onion powder, garlic powder, and the cumin. Mix them together.
  2. Then in a skillet, place the oil and the chicken breasts; sprinkle the mixture on both sides of the chicken pieces. Cook the chicken to an internal temperature of 152 degrees. I also like to sprinkle on a little salt and pepper, but that is up to you. When the chicken is cooked you can either slice or dice it. Set it aside until you are ready to place it on your bowl.

Toppings:

  1. In 4 serving bowls, or how many you need, place the lettuce of your choice, or if you like cabbage, you can use that in it's place.
  2. Place the vegetables like chopped tomatoes, corn, chopped onions, sliced avocados or any that you enjoy, and the chicken on top of your lettuce.
  3. Add cheese. Top with some chopped cilantro for garnishing. You can also sprinkle more cilantro throughout the bowl if you like.
