Sweet potatoes with marshmallows were one of those things that I grew up with. To be honest, I really didn’t  care for them. However these are amazing, and I could eat the whole pan.

I use to think that sweet potato soufflé was the only way to go, until I made these, and I think it must be the brown sugar and cinnamon that really make them so wonderful. Also the marshmallows on top, that are roasted to perfection, are amazing.

  • Sweet potatoes
  • Brown sugar
  • Ground allspice
  • Ground cinnamon
  • Miniature marshmallows

 

 

How Do I Make Sweet Potatoes with Marshmallows?

Here’s the simple steps you’ll follow to make these sweet potatoes (scroll down for the full recipe):

 

  • Preheat oven to 350 degrees.
  • Fill a large pan with water, then cut the potatoes into large cubes, and place them in the water.
  • Bring the potatoes to a boil, and reduce heat to medium.
  • Cook for about 20 minutes.
  • Remove the skins and mash the potatoes.
  • Add the sugar, allspice, and cinnamon.
  • Place them in a 9″x 9″ pan.
  • Put marshmallows on potatoes.
  • Bake in oven until marshmallows just begin to brown, 10-15 minutes.
  • Switch oven to broil; cook under broiler for about 1 minute.

How Do I Cook Sweet Potatoes or Yams?

 

Boil Them:

  • Fill a large pan with water, then cut the potatoes into large cubes, and place them in the water.
  • Bring the potatoes to a boil, and reduce heat to medium.
  • Cook for about 20 minutes, (or until they are soft when poked with a fork).
  • Remove the skins (or if you prefer, you can peel them before you cook them) and mash the potatoes.

 

Bake Them:

  • Preheat the oven to 400 degrees.
  • Some people like to wrap them in foil and bake them.
  • But if you are from Idaho (like I am), then you like to rub your potatoes with oil, poke holes in them with a fork and place them in the oven.
  • It is best if they are close to the same size; that way they cook very close to the same amount of time.
  • Also, place them on a baking sheet just in case the potatoes lose some juice.
  • Remove the skins and mash the potatoes.

 

Microwave Them:

  • Wash and dry the sweet potato.
  • Pierce the potato several times with a fork.
  • Wrap in a damp paper towel.
  • Microwave on high for 6-10 minutes on a microwave safe plate, I like to turn it over after about 4 minutes for a more evenly baked potato.
  • Remove the skins and mash the potatoes.
