Funeral Potato Casserole is a perfect side dish for a lot of meals. However our favorite is with sliced ham and a salad of your choice. Where I live they prepare a luncheon when people pass away for the family members because a lot of them live out of town. There aren’t a lot of places to eat and it makes it very nice for the family.

  • Cream of chicken soup (can substitute cream of cheddar)

  • Onions

How Do I Make Funeral Potato Casserole?

Here’s the simple steps you’ll follow to make Casserole (scroll down for the full recipe):

 

  • Preheat the oven to 350 degrees.
  • In a large bowl, place the hash browns, melted butter, soup, sour cream, onions, pepper, and 1 1/2 cups grated cheese.
  • Next, place the mixture into a 9″ X 13″ baking pan, and then put the remaining cheese on top of the mixture, and sprinkle the parsley on top.
  • Bake for 35 – 45 minutes, or until the center is warm and the cheese is melted.

 

 

 

 

Options to Put on Top of Funeral Potato Casserole:

 

  • Crushed potato chips
  • Crushed Cornflakes mixed with 3 Tablespoons melted butter
  • Chopped green onions
  • Dried parsley

 

Some of my neighbors crush potato chips and put on top of this casserole; not my favorite. And some put crushed Cornflakes mixed with 3 Tablespoons of melted butter, on top. I like to put cheese. However I do like the Cornflakes better than the potato chips, but that is just my preference.

  • 1 (30 ounce) package shredded frozen hash browns (thawed)
  • 1/2 cup melted butter
  • 1 (10.5) ounce can cream of chicken soup (can substitute cream of cheddar)
  • 2 cups or 16 ounces of sour cream (can use plain yogurt)
  • 1/4 - 1/3 cup chopped onions
  • 1 1/2 cups grated cheddar cheese + 1/2 cup for the top
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried parsley

Instructions
