  • Prepare a baking sheet with parchment paper and preheat the oven to 350 degrees.
  • In a larger mixing bowl, combine the rolled oats, nuts and seeds, salt, and cinnamon.
  • Stir with a wooden spoon.
  • Add the oil, maple syrup and vanilla extract. Stir well, and make sure that all the ingredients are lightly coated.
  • Place the granola onto the baking sheet and smooth it out evenly.
  • Bake for about 20-25 minutes.

Ingredients

  • 1 1/2 cups raw nuts or seeds; or mix and match
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup coconut oil or olive oil
  • 1/2 cup pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 cup crasins or raisins
  • Optional:
  • mini chocolate chips, coconut flakes, chia or flax seeds or any dried fruit cut into small pieces
