- Using a 1 1/2 quart glass dish, stir together sugar and syrup.
- Microwave on high for 3 minutes.
- Stir in peanuts.
- Prepare a baking sheet by lightly buttering it.
- Microwave on High for 2-4 minutes.
- Add the butter and vanilla extract to the mixture, stir until well combined.
- Microwave on High for 1-2 minutes.
- Peanuts will start to turn lightly browned and mixture will be very hot.
- Using a hot pad to hold the mixture, add the baking soda and gently stir until light and foamy.
- Pour mixture on to the baking sheet.
- Allow the mixture to cool for about 1 hour.
- When it is cool, break into small pieces and store in an airtight container.

- If you have a high powdered microwave make sure to shorten the time on each process by 45 seconds to a minute.
- If you are not sure if your micro wave is high powered or not, then start each process with one minute less than the instructions recommend.
- Have all the ingredients ready to go as each step one needs to work quickly.
- Also make sure to put hot water in the hot bowl when cleaning up, this makes clean up a lot easier and you won’t break your bowl by adding cold water to a hot bowl.
How Do I Store Peanut Brittle?
- Store peanut brittle (after it’s completely cooled) in an airtight container at room temperature, for up to 6-8 weeks.
- Do not refrigerate, as the moisture from the fridge will cause the brittle to soften.
- Peanut brittle can be frozen and stored in an airtight container for up to 3 months.
