How Do I Make Baked Blueberry French Toast?

Toast:
- Prepare a 9″ x 13″ baking dish, by spraying it with non stick cooking spray.
- Slice the bread into 1″ cubes and place half of the bread into the prepared pan.
- Cut the cream cheese into 1″ cubes; and place them over the bread.
- Top this with the 1 cup of blueberries, then the other half of the bread.
- In a large bowl, beat the eggs.
- Next add the milk and honey, and mix the mixture well.
- Pour the mixture over the bread, cover with aluminum foil and place it in the refrigerator overnight.
- Remove from the refrigerator about 30 minutes before baking.
- Bake at 375 degrees for 30 minutes with the foil on.
- Then uncover the French Toast and bake for an additional 25-30 minutes or until the toast is golden brown, and the center comes out clean when checked with a wooden pick.

- In a sauce pan, combine sugar and cornstarch; then add the water.
- Bring to a boil over medium heat; boil for 3 minutes, stirring constantly. Stir in blueberries; then reduce the heat.
- Simmer for 8-10 minutes or until berries open up (or burst).
- Stir in butter until it is melted.
- Serve over French toast.
What Kind of Bread is Best for French Toast?
- I like using Sourdough bread, French bread, or a similar Artisan bread, but regular bread works well too.
- For a bit of a fancy twist, try an enriched bread like challah or brioche.
- No matter what kind of bread you choose to make French toast, day-old bread is the best. Since it is dry, it can soak up more of the liquid.
