Gluten free apple muffins are the perfect way to start out the new year. These gluten free apple muffins are packed with flavor and very moist. I also use Stevia in mine, trying to make them a little healthier for this new 2018 year.
My husband and I decided it is time to get back into better shape. So where ever we can eat a little healthier, we will do it. I love something that I saw the other day; it went like this, “not a diet, it is a way of life.” So after the holiday season, I wasn’t having a very good way of life. I was eating too many delicious treats.
It seems like we say, when Christmas is over, I will start eating healthier and then comes New Years; of course there is my sister’s birthday and my husband’s birthday. What about Valentine’s Day and then of course I must have a birthday too!!!
I can truly think of a lot of reasons to have a few extra treats. But we can all do this, and even if we have a birthday here and there, we can still have a piece of cake once in awhile. Then get back on to a healthier way of life and I am pretty sure that we will all feel a lot better.
So I felt like these gluten free apple muffins were a little healthier using the Stevia, the apple sauce, and the apples. And I don’t know if you are like me, but I have just a few pounds to get rid of! When I made brownies and chocolate covered nuts, I just couldn’t help myself!
What Ingredients Do I Need For Gluten Free Apple Muffins?
Here’s a list of ingredients you’ll need to make these Muffins (scroll down for the full recipe):
- 3 cups Paleo flour (I used Bob’s Red mill Gluten Free)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 2 larger apples, peeled, cored and chopped
- 1/2 cup applesauce
- 1/2 cup coconut oil (I warm it in the microwave for about 20 seconds)
- 2 cups sugar
- 3 eggs, beaten
How Do I Make Gluten Free Apple Muffins?
Here’s the simple steps you’ll follow to make these Muffins (scroll down for the full recipe):
- Spray 2 regular size muffin tins with cooking spray.
- In a medium bowl, place 3 cups Paleo flour, 1 teaspoon baking soda, 1 teaspoon salt, 1 1/2 teaspoons cinnamon, and 2 large apples (peeled, cored and chopped).
- In a separate bowl, mix 1/2 cup warmed coconut oil, 2 cups sugar, 1/2 cup applesauce, and 3 beaten eggs.
- Then add the wet ingredients to the dry ingredients. Mix just until blended.
- Fill each muffin tin 3/4 full.
- Bake at 325 degrees for 18-20 minutes.

Also, last night I decided to plug in the new alarm clock that my husband gave me. He didn’t like the other one that I had. It was very old and I almost came out of bed every time it would go off. (It was very LOUD!)
So I plugged the new one in and it was a process to get the alarm set, but my hubby helped me and we finally got it. Then when I was laying there in bed it was so bright on the dimmest setting, that I could see my hand. Now I don’t know about you, but when I go to sleep, I like it dark.
So this morning when my husband got up, he told me I will try that clock one more night and if it is as bright as I think that it is, we are taking it back. I wonder if green is just a lot brighter than red when it comes to light. My new one is green and the old one is red. Who knew? I will let you know what we find out!
