- Preheat the oven to 400 degrees.
- Next place the chicken on a cutting board and sprinkle with Italian seasoning, garlic powder, paprika, and salt and pepper.
- Cut each chicken breast lengthwise, leaving one of the sides attached, as to make a pocket.
- Add 3-4 sprigs of asparagus and just a few pieces of sun-dried tomatoes to a slice of mozzarella, roll it, then add it to the inside of the chicken breast.
- Use a toothpick to hold the chicken together.
- Place the Olive oil into an oven safe skillet, and cook over medium heat.
- Sear each side for 4-5 minutes on each side.
- Next place the oven safe skillet into the oven and bake for 15-20 minutes.
