This rainbow jello is beautiful—just like a rainbow!

My daughter had her baby yesterday and so I kept her other two kids over night.  My husband and I had forgotten what younger moms and dads go through. I got the 2 1/2 year old asleep.  I used my handy, dandy essential oil (I put the oil, sleep in it).

Well it was 45 minutes later, and here BOTH kids come up the stairs. What? Well the diffuser has a light on it and the 7 year old decided that he wanted to turn it on. That is when the diffuser tipped over and spilled the water that was in it (luckily it isn’t very big). I guess when that happened, since it was by the 2 yr old’s bed, that woke her up.

Well I must admit, I went to you tube and got a meditation for kids and turned it on, as this was her first sleepover and she was not very happy to be away from mom and dad. It took a good 30 minutes but she was soon sound asleep again. Bonus, (she slept all night)!

What Ingredients Do I Need For Rainbow Jello?

Here’s a list of ingredients you’ll need to make this Jello (scroll down for the full recipe):

 

  • Lemon Jello
  • Peach Jello
  • Raspberry Jello
  • Berry Blue Jello
  • Grape Jello
  • Lime Jello
  • Plain or vanilla yogurt

 

 

How Do I Make Rainbow Jello?

Here’s the simple steps you’ll follow to make this Jello (scroll down for the full recipe):

 

Jello:

  • Spray a bundt cake pan with cooking spray.
  • Make the color of jello that you want to be on top.
  • Place 1/2 of the first color into the bundt pan.and place the other half in a different container.
  • Let jello cool for about 10 minutes. Mix 2 Tbsp of yogurt into the second half of the same color.
  • Pour the jello yogurt mixture into the bundt pan making the next layer.
  • Repeat each layer making sure that the jello isn’t too warm when adding it to the next color, as you do not want the jello that has just set up, to melt.
  • Once you are done with all the colors, let the jello set for at least a couple of hours.

 

Plating the Jello:

  • Cool a large flat plate that is at least 2 inches larger than the bundt pan to serve the jello on.
  • That way when the jello comes out of the bundt pan, it doesn’t melt as fast, and the jello doesn’t spill over the sides.
  • Take the cooled plate and place it on top of the bundt pan.
  • Hold the pan and plate together tight, and turn them over slowly, allowing the jello to come out.
  • Slowly remove the bundt pan off the Jello.
  • Serve immediately.
  • This makes a lot. You may only want to use 4 or 5 layers.

 

 

Can I Use Different Flavors of Jello For Rainbow Jello?

 

  • You can use whatever flavors that you want.
  • We have found these six flavors to be the best for the rainbow colors that we desired.

 

 

 

 

We went to  see the new baby yesterday.  Mom had told them that they could each go to the Dollar Store and buy a balloon for the baby.  I went to the store with the 2 1/2 year old.

My husband, son, and grandson went to get gas for the van. They came back to pick us up and we took the balloons and went to the van. When we got there, my grandson had a bloody nose. We had Kleenexes, but no wipes.

My husband went around the car to see if there were some in the door on the other side. Leaving the door open he went back to help my grandson. I was using a water bottle to wet some tissue and my son was buckling my granddaughter into her car seat.

We got everything taken care of and when we all got in the van to go to the hospital, my son said “where is the other balloon”? Ha ha, we looked up in the sky and sure enough there it was.

 

Could I Use Whipping Cream Instead of Yogurt?

 

  • Yes, you could use whipping cream instead of yogurt.
  • It would be a little sweeter, and a little less healthy.

 

 

 

 

I thought of the people that might come to the blog and visit, and enjoy the recipes. But then I realized that I am getting older and I won’t live forever. There will be people who like the blog and those that don’t, but this will be one way that I can be a part of their lives for years and years to come.

The recipes that we eat and share, like this rainbow Jello, at our parties and throughout their lives will be preserved. I wish that I had more of the recipes that my mother and mother-in-law made. Life is short and we think that parents will live forever. So I hope that all my kids and grand kids will enjoy the blog as much as I enjoy cooking for them. I am a lucky mom and grandma!

This rainbow Jello is one of our family Easter traditions!  It does take a little time to make, but it is worth the effort. Rainbow Jello

Rainbow Jello

This rainbow jello is so colorful and a lot of fun. It tastes so good with all the many flavors all blended together. Nothing says spring like this jello.

Cook Time 5 minutes
Total Time 3 hours 5 minutes

Ingredients

  • 1 (3 ounce) package of jello for each of the following flavors:
  • lemon
  • peach
  • raspberry
  • berry blue
  • grape
  • lime
  • 1 cup water (for each package)
  • 2 Tbsp plain or vanilla yogurt (for each color)

Instructions

Jello:

  1. Spray a bundt cake pan with cooking spray. That way the jello will come out a lot easier once all the colors have set up.
  2. Add 1 cup of boiling water to the first color of jello that you want to be on top. I used yellow.
  3. Stir until jello is dissolved.
  4. Add 1/4 cup cold water and stir.
  5. Place 1/2 the first color into the bundt pan.and place the other half in a different container.


Adding Yogurt:

  1. Let jello cool for about 10 minutes. Mix 2 Tbsp of yogurt into the second half of the same color. I just let mine sit on the cupboard for about 10 minutes.
  2. Pour the jello yogurt mixture into the bundt pan making the next layer.
  3. If I want to hurry up the process, instead of adding the cold water, I add 2 ice cubes to the jello and that way it cools off faster.
  4. Repeat each layer making sure that the jello isn't too warm when adding it to the next color, as you do not want the jello that has just set up, to melt.
  5. Each layer needs about 15-20 minutes at first then the layers get thinner and you will only need
  6. about 15.
  7. If you have enough containers, you can mix all the jellos at the same time.
  8. Just let them sit on the counter and after 15 minutes add the next color.
  9. Just remember to separate them into 2 different bowls and add the yogurt to each.
  10. Once you are done with all the colors, let the jello set for at least a couple of hours.


Plating Jello:

  1. Cool a large flat plate that is at least 2 inches larger than the bundt pan to serve the jello on. That way when the jello comes out of the bundt pan, it doesn't melt as fast, and the jello doesn't spill over the sides.
  2. Place the bundt pan into some cool water for 30 seconds to 1 minute.
  3. If the water is too warm, the jello will start to melt. I have found that the jello comes out a lot better if you get the water level all the way on the outside of the pan to where the jello is.
  4. Watch for the jello to start liquefying slightly.
  5. Wipe the outside of the pan so that water doesn't get onto the jello.
  6. Take the cooled plate and place it on top of the bundt pan.
  7. Hold the pan and plate together tight, and turn them over slowly, allowing the jello to come out.
  8. Slowly remove the bundt pan off the jello; it should release easily.
  9. Once in awhile I have had to put the jello back into the water.
  10. Just take time to watch and see if you can see it slightly melt around the outer edges.
  11. Serve immediately.
  12. Refrigerate the remaining jello.
  13. This makes a lot. You may only want to use 4 or 5 layers.
