Ingredients
- 8 cups fresh peaches
- 1 cup pineapple juice, (or simple syrup made with 1/2 cup warm water and 1 cup sugar)
- 1 yellow cake mix
- Sprinkle of ground cinnamon
- 1/4 cup butter, sliced
Instructions
- Line a 10" or 12" dutch oven with aluminum foil if you desire, or pad the bottom of the pan with 1/4 cup butter slices. Make sure that the foil doesn't interfere with the lid closing.
- In a separate bowl, peel and slice the peaches, then add the simple syrup or pineapple juice. (Pineapple juice is my favorite. You just might want to try both and see which one you prefer)!
- In another bowl, mix up the cake mix with no eggs, adding the extra liquid until smooth. It needs to be thin enough that you can pour it onto the peach mixture.
- Sprinkle with cinnamon.
- Place butter that has been sliced in thin squares over the top of the cake mixture.
- Level the dutch oven, and place the peach mixture into it.
- Then add the cake batter.
- Cover with the lid and cook at 350 degrees for 30-40 minutes; make sure to check the cobbler, as all ovens cook differently and you might have to add extra time.
- Test with a cake tester or wooden pick or a knife, making sure the knife comes out clean.
- When the cake is golden brown, and starts to crack, it is usually finished.
- Top with vanilla ice cream or fresh whipped cream while it is still warm.
- * If your dutch oven is a regular black dutch oven an not very well seasoned, you may want to use water or line your dutch oven with aluminum foil because of the acidity in the pineapple juice!
