Date Cookies with Rice Krispies are one of my favorite treats. They are simple to make and the dates provide such a nice texture.

This recipe is from my Aunt Helen who is my mother’s sister. I always loved how I grew up around so many good cooks and I am happy when they are willing to share their recipes.

I also love the pecan crunch along with the Rice Krispies and as far as rolling them in coconut, I like them either way; with coconut or without.

What Ingredients Do I Need For Date Cookies with Rice Krispies?

  • Butter
  • Granulated sugar
  • Dates
  • Milk or cream
  • Egg
  • Rice Krispies cereal
  • Chopped pecans or walnuts
  • Fine coconut (optional)

How Do I Make Date Cookies with Rice Krispies?

Here’s the simple steps you’ll follow to make these Cookies (scroll down for the full recipe):

 

  • Melt the butter in an electric frying pan.
  • When the butter is melted, add the sugar and chopped dates.
  • Cook the mixture for 2-3 minutes making sure that you coat the dates well.
  • Turn the heat off.
  • Combine the milk and egg.
  • Add to the date mixture very slowly.
  • Turn the heat back on.
  • Cook for another minute.
  • After mixture starts to boil, stir constantly.
  • Unplug frying pan.
  • Add Rice Krispies and nuts.
  • When cool enough to handle, form the mixture into 1″ balls.
  • Roll in coconut, or if you do not care for coconut, just roll into balls.

 

 

 

 

Tips and Tricks For Date Cookies with Rice Krispies:

 

  • You can use pre-chopped dates, but I prefer dates that must be chopped. They seem to give the cookies a moister texture.
  • Sweetened or unsweetened coconut can be used. It really doesn’t seem to make a difference.
  • Walnuts or pecans are fine. You could probably really use any nuts that you wanted. Or don’t use nuts at all, especially if nut allergies are a concern.

 

 

 

How Do I Store Date Cookies with Rice Krispies?

 

  • Store date balls in an airtight container or a zip-top plastic bag.
  • The balls won’t lose their shape or stick together, so no wax paper is necessary. 
  • They don’t freeze well, as the Rice Krispies soften. 
  • However they do travel well! They won’t break when shipped!

Date Cookies With Rice Krispies

Date cookies with Rice Krispies are soft and chewy, with a nice crunch of Rice Krispies. Add pecans or walnuts and roll them in coconut.

Cook Time 5 minutes
Total Time 15 minutes

Ingredients

  • 1 cup butter
  • 1 1/2 cups granulated sugar
  • 2 cups dates, chopped
  • 2 Tablespoons milk or cream
  • 1 egg, beaten
  • 4 cups Rice Krispies cereal
  • 1/2 cup chopped pecans or walnuts
  • fine coconut for rolling cookies in

Instructions

  1. Melt the butter in an electric frying pan; I put the heat between 350-352.
  2. When the butter is melted, add the sugar and chopped dates.
  3. Cook the mixture for 2-3 minutes making sure that you coat the dates well.
  4. Turn the heat off.
  5. Combine the milk and egg.
  6. Add to the date mixture very slowly so that the egg mixes in and doesn't start to cook too much.
  7. Turn the heat back on.
  8. Cook for another minute.
  9. After mixture starts to boil, stir constantly.
  10. Unplug frying pan.
  11. Add Rice Krispies and nuts.
  12. When cool enough to handle, using a small cookie scoop or just form the mixture into 1" balls.
  13. Roll in coconut, or if you do not care for coconut, just roll into balls.
