How Do I Make Crockpot Cashew Chicken?

Here’s the simple steps you’ll follow to make this Chicken (scroll down for the full recipe):

 

  • Combine the flour and black pepper in a resealable plastic food bag. Add chicken and then shake the bag to coat the chicken.
  • Heat the oil in a large skillet over medium-heat and then brown the chicken. Remove the chicken and place it into a slow cooker.
  • Combine the soy sauce, vinegar, ketchup, sugar, garlic, ginger and the pepper flakes in a small bowl; then pour it over the chicken.
  • Cook in the slow cooker or crockpot for 2 – 3 hours on low.
  • About 5 minutes before serving, add the cashews.
  • Serve over rice, or to the side of rice, fried rice or even noodles.

Ingredients

  • 2 pounds (or about 4 medium) chicken breasts, boneless & skinless, cut into pieces or cubed
  • 1/4 cup all purpose flour or 1/8 cup cornstarch
  • 1/2 teaspoon black pepper
  • 1 Tablespoon oil
  • 3/4 cup low-sodium soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup ketchup
  • 3 Tablespoons brown sugar
  • 2 large garlic cloves minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes
  • 1/2 - 1 cup cashews, unsalted or to your liking
