These Copycat Crumbl Buckeye Brownie Cookies work up nice and fast, however if you want enough to share, you just might want to double the recipe. 

I love the Buckeye Cookies from Crumbl and so I decided to make my own and boy am I glad I did. They are so delicious and worth sharing with others.

Cookies:

 

  • Butter
  • Brown sugar
  • Granulated sugar
  • Egg
  • Vanilla extract
  • All purpose flour
  • Cocoa powder
  • Baking soda
  • Salt

 

Buckeye Filling:

 

  • Butter
  • Vanilla extract
  • Peanut butter
  • Confectioners sugar

 

Chocolate Topping:

 

  • Semi sweet chocolate chips

How Do I Make Copycat Crumbl Buckeye Brownie Cookies?

Here’s the simple steps you’ll follow to make these cookies (scroll down for the full recipe):

 

Cookies:

 

  • In a mixing bowl, place the butter and sugars, and mix together.
  • Next add the egg and vanilla extract.
  • Place the flour, cocoa, baking soda, and salt, and mix to combine.
  • Make dough balls by using a large cookie scoop. Dough should make about 12 cookies.
  • Place six dough balls on each baking sheet.
  • Using a cup, press the dough balls down, leaving the dough about 1″ thick.
  • Bake in the oven for 12 minutes.
  • Leave the cookies on the baking sheet for 6-8 minutes, and then move them to a wire rack to cool completely.

 

Buckeye Filling:

 

  • In a medium bowl, mix the butter, vanilla extract, peanut butter, and the confectioners sugar.
  • When it is all mixed, divide evenly on each cookie.

 

Chocolate Topping:

 

  • In microwave safe bowl, place the chocolate and about 1/2 teaspoon oil.
  • Place in the microwave on POWER level 5, cook in 30 second intervals.
  • When the chocolate is melted, place some chocolate on top of each cookie.
  • Allow the chocolate to set up.
  • Can add sprinkles, if desired.

Buckeye Brownie Cookies are soft chewy and delicious. They are large enough that you can cut one in half and share with a friend.

Ingredients

Cookies:

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoon vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Buckeye Filling:

  • 1 Tablespoon butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup peanut butter
  • 1/2 cup confectioners sugar

Chocolate Topping:

  • 3/4 cup semi sweet chocolate chips, melted

Instructions

    Cookies:

    1. Preheat the oven to 350 degrees.
    2. Line a baking sheet with parchment paper or a baking sheet.
    3. In a mixing bowl, place the butter and sugars, and mix together until light and fluffy.
    4. Next add the egg and vanilla extract.
    5. Place the flour, cocoa, baking soda, and salt and mix to combine.
    6. Make dough balls by using a large cookie scoop. Dough should make about 12 cookies.
    7. Place six dough balls on each baking sheet.
    8. Using a cup, press the dough balls down, leaving the dough about 1 1/2" thick.
    9. Bake in the oven for 12 minutes.
    10. Leave the cookies on the baking sheet for 6-8 minutes, and then move them to a wire rack to cool completely; otherwise, cookies will fall apart.
