Coconut lime swig cookies are my very favorite cookie! They are soft and chewy and the flavor is to die for!! Squeeze a little fresh lime juice on top and you will be in heaven.
If you have someone that you really love, I think that you would want to make them some of these Coconut Lime Swig Cookies. Chocolate chip cookies are one amazing cookie, but these coconut lime swig cookies are fabulous.
Also I love that you can roll them out and they are a nice soft sugar cookie, but you don’t have to cut them out with cookie cutters after you roll them out. Just plain roll the dough into a ball, (or I used the larger cookie scoop to make each dough ball), place the dough balls on a cookie sheet and press down with a glass.
Be sure to dip the glass in sugar each time so that the dough does not stick to the glass. I think that if you try these coconut lime swig cookies, you will have found your new best favorite cookie.

Cookies:
- Butter
- Coconut oil
- Sugar
- Confectioners sugar
- Eggs
- Lime juice
- Lime zest
- Coconut extract
- All-purpose flour
- Cornstarch
- Baking soda
- Cream of tarter
- Salt
Coconut Lime Cream Cheese Frosting:
- Cream cheese
- Butter
- Lime juice
- Lime zest
- Coconut extract
- Confectioners’ sugar
How Do I Make Coconut Lime Swig Cookies?
Here’s the simple steps you’ll follow to make these cookies (scroll down for the full recipe):
Cookies:
- In a large mixing bowl, cream butter, coconut oil, and sugars.
- Mix in the eggs.
- Add the lime juice, lime zest, and coconut extract. Mix well.
- Add flour, cornstarch, soda, cream of tarter, and salt. Mix to combine.
- Roll dough into ping pong ball size.
- Place on a cookie sheet, and press down with a glass. So that the glass doesn’t stick, dip the bottom into the Additional 1/4 cup of sugar. Dip the glass after each cookie. Flatten each cookie to about 1/2 inch.
- Bake @ 350 degrees for 8-10 minutes or until the bottom of the cookies start to turn brown.
- Cool and add the frosting!
Frosting:
- In a medium mixing bowl mix the cream cheese and butter.
- Then add the lime juice, zest, and the coconut extract.
- Slowly adding the confectioners’ sugar.
- Mix until smooth.
- If you like, you can add just a few tiny pieces of lime zest on top of each cookie.
- You can add a fresh slice of lime right before serving.
- Keep in an air tight container in the refrigerator.
- They soften up when the frosting has been on for a couple of hours.
- These cookies are nice and soft.
The only problem is that the frosting is so good, I just want to eat it right out of the bowl with a spoon. These cookies are a little bit larger and so one goes a long way.
I find that the next day after they have sat with the frosting on top that they get a little softer. I like to keep mine in the fridge because of the cream cheese frosting. You can top each cookie with a lime slice, but don’t put it on top until you are ready to serve them, because you don’t want the cookie to go soggy.
So what kind of events do you like to take cookies to? I know if you go into one of these places where they serve different kinds of pop and cookies, these cookies will run you about $2.50. So if you ever need a fund raiser, these are really a great cookie.
Since they are a little larger, you feel like you get more cookie for your money. How about lemonade stands, and some cookies to go with the lemonade. You will be helping your kids make bank! These cookies really are irresistible.
What Is Swig?
- Swig is a drink and cookie shop that started in St. George Utah in 2010.
- It has expanded since then with several shops in Utah and a few outside of Utah.
- They serve nonalcoholic drink concoctions and a small variety of Homemade Cookies.
This recipe makes 24 cookies and so you might just want to hide some in the freezer. That way you won’t be eating them all in the same day.
Just thinking about them, I guess I better go get on the treadmill. It is a little too hot to walk outside, at least during the day, and at night I don’t know about you, but we have a few too many mosquitoes.
What kind of things keep you from enjoying the cooler, more peaceful evenings? It seems like we could have more cookouts outside and time to sit around a camp fire, but it is hard when you live so close to neighbors.
However it is fun to get out the BBQ and enjoy the great outdoors cooking outside and then bring the food in where it is nice and cool. If you do, you know what to fix for dessert!

Ingredients
- 1 cup butter, softened
