Cinnamon chip snickerdoodle cookies are a favorite at our house. These snickerdoodles are soft and delicious. In fact we think that they are so yummy we are going to put them in the local fair this year. I am helping my 8 year old grandson make them. He thinks we will get a blue ribbon and I agree.

How Do I Make Cinnamon Chip Snickerdoodle Cookies?

- Combine the 2 Tablespoons of sugar and the 2 teaspoons of cinnamon in a small bowl and set it aside.
- In a mixing bowl blend the butter and brown sugar and mix until fluffy.
- Add the egg and vanilla extract and mix together.
- Add the flour, cream of tartar, and the soda, mixing until well blended.
- Combine the 1/4 cup of sugar and the Tablespoon of cinnamon in a small bowl.
- Shape into 1″ balls.
- Place them in the sugar mixture and coat the entire cookie ball.
- Place on a cookie sheet and bake for 10-12 minutes.
How Do I Store Cinnamon Chip Snickerdoodle Cookies?
- You can make the cookie dough ahead of time and chill it in the refrigerator for up to 3 days. Then when you are ready to bake the cookies, allow the dough to come up to room temperature before baking the cookies. I like to make them into balls before I put them into the refrigerator, but you can do it either way.
- You can also freeze the cookie dough balls, and they will last for up to 2-3 months. I suggest that you roll them in cinnamon and sugar after they thaw from the freezer. Allow them to thaw for at least 30 minutes, then pre-heat the oven, roll them in the cinnamon and sugar.
- One other way is to freeze the baked cookies in an air tight container for up to 3 months. Thaw in the refrigerator overnight before serving or pop them in the microwave for 15-20 seconds.

Cinnamon Chip Snickerdoodle Cookies are a soft cookie that is rolled in cinnamon and sugar. They are a favorite for kids and adults.
Ingredients
Cookies:
- 1/2 cup butter, @ room temperature
- 3/4 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon baking soda
- 1/2 - 3/4 cup Cinnamon chips
Coating:
- 1/4 cup sugar
- 1 Tablespoon ground cinnamon
Instructions
- Preheat the oven to 350 degrees.
- In a standard mixer, add the butter and brown sugar. Mix to combine, then add the egg and vanilla extract and mix them well.
- Add the flour, cream of tartar, and baking soda and mix to combine.
- Mix in the Cinnamon Chips.
- In a small bowl, place the 1/4 cup sugar and the 1 Tablespoon of cinnamon.
- Using a small cookie scoop or 2 small spoons, make 1" cookie dough balls. Then place the dough balls into the cinnamon and sugar mixture, and coat completely.
- Place the coated dough balls onto a cookie sheet that has a baking mat or just a regular cookie sheet.
- Bake the cookies for 10-12 minutes.
- Allow the cookies to sit on the cookie sheet for a few minutes before removing them to a cooling rack.
