I love how easy it is to make it come together. My family loves the taste of it and so it is a win win for all. I love that it has some broccoli in it, as well as chicken and most of my family’s favorite part of this dish is the creamy noodles. mmmmm!

  • Fettuccine is a thick, flat noodle.
  • It is wider than linguine but slightly narrower than tagliatelle.
  • Since fettuccine is thicker than linguine, it can be eaten with thicker sauces.
  • Sauces like Alfredo are often eaten with fettuccine because the sauce can cover the whole pasta

 

President Russell M Nelson the prophet of our church has a wonderful saying “The joy we feel has little to do with circumstances of our lives, and everything to do with the focus of our lives”. I love this quote, because the older I get, I realize that when we assume things or have expectations and they do not go the ways we expected, we are frustrated.

Sometimes we are down right mad or even disappointed. One thing that I have had to do is to stop and think of what is going on and why I feel the way I do in that circumstance. Then I stop and tell myself, that I can be happy or not.

Happiness really is a choice. Yes, there will be those times when we feel less than others, by our own choosing or we feel that we are so picked on. Maybe we are. But I again have started trying to tell myself, things will all work out.

It is like the saying,” I choose joy in the snow, you can have the same amount of snow and less joy”! And just like chicken fettuccine Alfredo, I can sit back and enjoy eating it or I can tell myself that it is too fattening.

What Ingredients Do I Need For Chicken Fettuccine Alfredo?

  • Chicken
  • Fettuccine noodles
  • Butter
  • Garlic cloves
  • Cream cheese
  • Milk
  • Parmesan cheese
  • Broccoli
  • Salt
  • Pepper

 

How Do I Make Chicken Fettuccine Alfredo?

  • In a large skillet, cook chicken in a little olive oil.
  • While chicken is cooking, cook fettuccine noodles according to the package directions.
  • Remove chicken from the pan and add butter and garlic cloves.
  • Add cream cheese, milk, and Parmesan cheese; cook until cheeses melt.
  • Stir until smooth on a lower heat.
  • Steam broccoli in a saucepan with a couple inches of water. Bring to a boil, reducing the heat for about 8 minutes if the broccoli is fresh. If it is frozen, I usually put it in the microwave for about 4 1/2 minutes. Drain.
  • Add chicken, broccoli, and salt and pepper into the cheese sauce; heat until warm.
  • Drain fettuccine when done. I add the noodles to the cheese sauce in the pan or you can keep your sauce separate and prepare individual portions. Add a little more milk if it gets too dry.

 

This Chicken Fettuccine Alfredo is one of my family’s favorites and will become one of your family’s favorites too. The Alfredo is fantastic and all of the other ingredients make this the perfect dish.

This recipe is what my youngest asks for every year on his birthday. We also love to have it when we get together on Sundays. You can make it in about 30 minutes.

I encourage you to see if your family likes it as much as mine does. And if they don’t care for broccoli, then you can replace it with any vegetable that you like.

Tips and Tricks For Chicken Fettuccine Alfredo:

  • Sometimes we like to top it off with bacon bits. Well some of us that like bacon do! 😉
  • I make it on top of the stove, I cook my noodles in another pan and then I add the noodles to the big pan and put the pan right on the table.
  • Asparagus would be another wonderful vegetable in this dish in place of the broccoli.

  • 1 pound boneless & skinless chicken
  • 1 package (16 ounces) fettuccine noodles
  • 1/2 cup butter (or margarine)
  • 2 minced garlic cloves
  • 1 package (8 ounces) cream cheese
  • 1 1/4 cups milk
  • 1/2 cup grated Parmesan cheese
  • 2 cups broccoli (fresh, steamed, or frozen)
  • 1/2 tsp. salt
  • pepper to taste
