What Ingredients Do I Need For Chicken Cacciatore?

Here’s a list of ingredients you’ll need to make this cacciatore (scroll down for the full recipe):

 

  • Olive oil
  • Bone-in skinless chicken thighs
  • Salt and pepper
  • Onion
  • Garlic cloves
  • Red and yellow (or green) bell pepper
  • Carrots
  • Mushrooms
  • Sliced black olives
  • Fresh sprigs of thyme
  • Chopped parley
  • Chopped basil
  • Dried oregano
  • Chicken broth
  • Canned crushed tomatoes
  • Tomato paste
  • Roma tomatoes
  • Red pepper flakes
  • Cayenne pepper

 

How Do I Make Chicken Cacciatore?

Here’s the simple steps you’ll follow to make this cacciatore (scroll down for the full recipe):

 

  • Salt and pepper the chicken, sprinkling some on both sides.
  • Add 2-3 Tablespoons of oil to a skillet or cast iron pan. Cook the chicken on both sides until it is golden brown, 3-4 minutes on each side.
  • Remove chicken from skillet and set it aside.
  • Add a couple more Tablespoons of oil to the skillet, then sauté the onions until they are a little softer (4-5 minutes). Next add in the garlic and cook for another minute.
  • Add the peppers, carrots, mushrooms and herbs, and allow them to cook for about 4- 5 minutes or until the vegetables are soft.
  • Pour in the broth.
  • Add the crushed tomatoes, tomato paste, Roma tomatoes and chili flakes. Season with salt and pepper to taste, and a sprinkle of cayenne pepper.
  • Place the chicken pieces in the skillet and continue to cook, using the Stove Top Method or the Oven Method, as shown below:  

 

STOVE TOP METHOD:

  • Mix all of the ingredients together, cover the pan with a lid and turn the heat to low.
  • Allow the mixture to simmer for about 35-40 minutes stirring the mixture every 15 minutes. Then add the olives.
  • Simmer for an additional 10 minutes. Garnish your dish with parsley and serve immediately.

 

OVEN METHOD:

  • Place the dish with a lid into a oven that is preheated to 375 degrees, and allow the mixture to cook for 45-50 minutes.
  • Then add olives to the mixture and cook for and additional 15-20 minutes, or until chicken is nice and tender.

 

 

 

Tips and Tricks For Chicken Cacciatore:

 

  • If you like your chicken cacciatore thicker, you can add a little more tomato sauce.
  • It is also nice to have a few different options to cook chicken cacciatore, such as the Stove Top Method and the Oven Method; as listed in the recipe.

Freezer Meal Instructions For Chicken Cacciatore:

 

  • Place the cooled cacciatore into an air tight container or baggie and write content on the outside of the bag.
  • Place it in the freezer.
  • When you are ready to use it, allow mixture to thaw for 4-5 hours on the counter and then place into the pan that you will be using to heat it through.
  • Heat until the mixture reaches 155 – 160 degrees.
  • Serve.

Ingredients

  • 2-4 Tablespoons olive oil, divided
  • 6-7 bone-in skinless chicken thighs; use ones with no skin for less greasiness
  • Season with salt and pepper
  • 1 small to medium onion, diced
  • 3 garlic cloves, minced
  • 1 red and one yellow (or green) bell pepper, diced
  • 1-2 carrots, peeled and sliced
  • 1 (10 ounce) can mushrooms, sliced
  • 1/2 cup sliced black olives
  • 4-5 fresh sprigs of thyme
