- Bone-in skinless chicken thighs
- Salt and pepper
- Onion
- Garlic cloves
- Red and yellow (or green) bell pepper
- Carrots
- Mushrooms
- Sliced black olives
- Fresh sprigs of thyme
- Chopped parley

- Dried oregano
- Chicken broth
- Canned crushed tomatoes
- Tomato paste
- Roma tomatoes
- Red pepper flakes
- Cayenne pepper
How Do I Make Chicken Cacciatore?
Here’s the simple steps you’ll follow to make this cacciatore (scroll down for the full recipe):
- Salt and pepper the chicken, sprinkling some on both sides.
- Add 2-3 Tablespoons of oil to a skillet or cast iron pan. Cook the chicken on both sides until it is golden brown, 3-4 minutes on each side.
- Remove chicken from skillet and set it aside.
- Add a couple more Tablespoons of oil to the skillet, then sauté the onions until they are a little softer (4-5 minutes). Next add in the garlic and cook for another minute.
- Add the peppers, carrots, mushrooms and herbs, and allow them to cook for about 4- 5 minutes or until the vegetables are soft.
- Pour in the broth.
- Add the crushed tomatoes, tomato paste, Roma tomatoes and chili flakes. Season with salt and pepper to taste, and a sprinkle of cayenne pepper.
- Place the chicken pieces in the skillet and continue to cook, using the Stove Top Method or the Oven Method, as shown below:
STOVE TOP METHOD:
- Mix all of the ingredients together, cover the pan with a lid and turn the heat to low.
- Allow the mixture to simmer for about 35-40 minutes stirring the mixture every 15 minutes. Then add the olives.
- Simmer for an additional 10 minutes. Garnish your dish with parsley and serve immediately.
OVEN METHOD:
- Place the dish with a lid into a oven that is preheated to 375 degrees, and allow the mixture to cook for 45-50 minutes.
- Then add olives to the mixture and cook for and additional 15-20 minutes, or until chicken is nice and tender.
