- Place the chocolate chips in the top of a double boiler, then place over medium low heat and stir until the chocolate is melted.
- Then slowly add the 3/4 cup heavy cream to the melted chocolate, making a nice ganache. Mix until it is nice and creamy.
- In a separate bowl, whip the 1 1/4 cups whipping cream; then when stiff peaks start to form, add the vanilla.
- Add the first mixture into the second mixture and gently fold together.
- Place in your favorite dishes, cups, or a regular see through plastic cup.
- Garnish as desired.
- Keep in the refrigerator until ready to use.
