Shrimp Macaroni salad is one of our favorite salads! It has so much flavor and you can add or take ingredients out according to what your family likes. If they do not like green onions then you can go ahead and leave them out. I add them mostly for color and extra flavor. The original recipe did not call for them.
I made this salad for a get together. We had a friend who decided after 62 years to get baptized. We were so happy for him. He is now 70 years old and his health is giving him a lot of fits! In our church, when we get baptized they immerse you completely into the water. When he went to get into the font, some of the water had drained out and so it was pretty shallow water.
They added some water, but when they went to baptize him, his knees popped up. So they tried again, and his feet popped up. They decided to add more water, and then one nice young man rolled up his pant legs and went into the font to hold our friends legs under the water. We could tell our friend was getting tired; as I told you, his health is not the best.
And guess what, the third time was a charm! It worked. After the baptism, we all had a wonderful get together and the food was outstanding! That is why I took my Shrimp Macaroni salad, because I knew that people would love it, and they did!
What Ingredients Do I Need For Shrimp Macaroni Salad?
Here’s a list of ingredients you’ll need to make this Salad (scroll down for the full recipe):
- Macaroni, I use elbow or small shells
- Eggs
- Shrimp
- Celery
- Green onion
- Cherry tomatoes, optional
- Mayonnaise
- Miracle Whip
- Mustard
- Vinegar
- Onion salt
- Salt
- Black pepper
How Do I Make Shrimp Macaroni Salad?
Here’s the simple steps you’ll follow to make this Salad (scroll down for the full recipe):
- Cook macaroni according to package directions. After it is cooked, place the macaroni in a strainer and rinse with cold water.
- Meanwhile mix the mayonnaise, Miracle Whip, vinegar, mustard, onion salt, salt, and pepper together.
- After you have drained the macaroni, place it into a large bowl.
- Add the dressing that you made above with the mayonnaise, mix lightly.
- Then add the eggs, shrimp, celery, green onion and the tomatoes.
- Garnish with a hard cooked egg and some paprika.
What I love about get togethers is that there are so many choices and I didn’t have to make all of them!!! What are some of the things that you like to eat on Father’s Day? Do you like to grill out or do you give dad a break and cook something inside?
My husband and I decided that if we are going to grill again, it will be on a different grill. The one that we use, was free with the purchase of some carpet a few years ago, and it is not the best grill in the world.
Tips and Substitutions For Shrimp Macaroni Salad:
- If you don’t have elbow macaroni, any small pasta shape will do
- Avocado would add a nice creamy texture
- The dressing can be lightened with low fat mayo or a mix of mayo and plain Greek yogurt
- Sub the vinegar for freshly squeezed lemon juice
I will just be getting back on Fathers Day, as my father-in-law is getting older and he wanted to go to Alaska. At first all of the siblings were going and now it is down to 2 of the siblings going, instead of 4. I am looking forward to it as I have never been to Alaska.
I have heard that it is a little chilly, and since I prefer warm, I will just have to take a coat and pretend that it is nice and warm. This getting older is not what I ever imagined. Who knew that temperature would mess with you so much. One minute I am warm and the next I am freezing.
I am lucky that I have a favorite jacket and we hang out a lot. All day long, it goes off and on. However, it doesn’t look like one that I should take with me, it does have paint on one of the arms. If you go to Alaska, you don’t want people to think that you are a slob.;) I have tried to buy other jackets, but they are never as comfortable as this old thing.
