We had a wonderful bridal shower the other day, and my cute daughter-in-law to be, loves oatmeal chocolate chip cookie butter cookies.  So I was so excited to make these cookies.

They are delicious, and I am amazed at how wonderful these cookies blend together.

  • Brown sugar
  • Sugar
  • Eggs
  • Vanilla
  • Flour
  • Baking soda
  • Cinnamon
  • Salt
  • Quaker oats, quick or old fashioned, uncooked

How Do I Make Oatmeal Chocolate Chip Cookie Butter Cookies?

Here’s the simple steps you’ll follow to make these Cookies (scroll down for the full recipe):

 

  • Heat the oven to 350 degrees.
  • In a large bowl, combine the butter and the sugars, mix until nice and creamy.
  • Add the eggs and vanilla; and beat well.
  • Then add the flour, baking soda, cinnamon and the salt.
  • Slowly add the oats, and chocolate chips, just to combine. Do not over mix.
  • Form into 1-2″ balls and place on a baking sheet.
  • Bake for 10-12 minutes depending on your oven and the amount of doneness that you like.
  • Remove to a wire rack.
  • When the cookies are cooled off, spread a small amount of cookie butter on the top of each cookie.
  • Store in an airtight container.

Oh, if you are like some people, you will want to put raisins in the cookies in place of the the chocolate chips. You can do whichever you want, or you may even want to do both raisins and chocolate chips!

Delicious and moist cookies that are sure to please everyone. They are chewy and full of flavor. The cookie butter is such a delightful topping.

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar , packed
  • 1/2 cup granulated sugar
  • 2 eggs
