- Olive oil
- Fresh squeezed lemon juice
- Red wine vinegar
- Fresh chopped parsley, or dried
- Dried oregano
- Basil
- Small garlic clove
- Salt
- Black pepper
- Boneless, skinless chicken breasts, cooked
Salad:
- Romaine lettuce
- Large cucumber
- Large Roma tomato
- Purple Onion
- Avocado

- In a medium bowl, whisk together olive oil, lemon juice, vinegar, water, parsley, oregano, basil, garlic, salt and pepper.
- You can either marinate the chicken with half of the dressing for 30 minutes to 2 hours, in a baggie in the refrigerator, or you can save the mixture and use it all as a dressing.
- If marinating; when the chicken is ready, place the chicken in a skillet and cook the chicken until the center reaches 160 degrees.
- Allow the chicken to cool.

- Meanwhile chop the lettuce, and place it into a large bowl.
- Then add the cucumber, tomato, onion, and avocado.
- Add the chicken when it has cooled.

Tips and Tricks For Mediterranean Chicken Salad:
- You could add some olives to your salad: any color that you like.
- Add more purple onion, if you are a fan, Personally, I am not, but you could use a half of one or more if you like.
- You also might want to add some orange or yellow peppers for additional color.
- Add Feta cheese; or if you are not big on Feta cheese, you could use mozzarella.
