- 2 stocks celery, finely chopped
- 1 tablespoon red or green onion, minced
- 1 tablespoon sweet relish
- 3/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt, less or more to taste
- 1/4 teaspoon ground pepper, or to taste

- In a food processor, pulse the ham, eggs, celery, and onion together until everything is well combined. I like to do this by mincing it a little at a time so that the mixture still has chunks, and so that it is the consistency I like for a sandwich.
