  • Cream cheese
  • Powdered sugar

How Do I Make Frosted Pumpkin Cake Cookies?

Here’s the simple steps you’ll follow to make these cookies (scroll down for the full recipe):

 

Cookies:

  • Preheat the oven to 350 degrees.
  • Line a baking sheet with a baking mat or parchment paper.
  • Cream the butter, brown sugar and white sugar together, mix until nice and smooth.
  • Next add in the egg yolk, pumpkin puree, and the vanilla extract.
  • Add the flour, salt, baking powder, cinnamon, pumpkin pie spice, and mix.
  • With a 2 1/2″ cookie scoop make 8 cookies, place them on the cookie sheet and then with the bottom of a glass, flatten the cookies.
  • Bake in a preheated oven for 12-14 minutes.
  • When the cookies are done, leave them on the baking sheet for another 15-20 minutes. Then remove to a wire rack and allow the cookies to cool completely.
  • Frost the cookies using a baggy with the corner cut out or a decorating bag.

  • In a medium mixing bowl, place the butter and the cream cheese, mix until smooth.
  • Add the powdered sugar and mix on low, add the vanilla extract.
  • Mix until smooth.
  • Frost the cookies.
