I feel that zucchini is becoming a lot more popular. I know back in my younger years people didn’t even think about putting zucchini in muffins and cookies. It seems that the only thing that I can remember it being in was bread. It makes a wonderful loaf of bread. I know that I have all kinds of recipes that you can put zucchini in.
Do you remember the joke that was going around that went like this? A business man visited from New York, he was staying with a friend. When they arrived at the man’s house, from the airport, they got out of the car and they didn’t even lock the car. The next day when they went to church the man locked his car and his friend asked him, “why do you not lock your car door at home, but you lock it at church, are you not more afraid of getting things stolen at home than at church”? The man responded and said, “the reason I lock my door at church is because I am afraid of people putting zucchini in my car! Lol.

- Canola or coconut oil

How Do I Make Easy Zucchini Muffins?
Here’s the simple steps you’ll follow to make these Muffins (scroll down for the full recipe):
- Preheat oven to 350 degrees.
- Line a regular size muffin tin with liners or spray with nonstick cooking spray.
- In a medium sized bowl, mix together sugar, eggs, oil and vanilla.
- Add flour, cinnamon, baking soda, baking powder and salt, mix together lightly.
- Add the zucchini and chocolate chips, mix until the batter is combined. Do not over mix.
- Fill muffin cups 3/4 full.
- Bake for 16 – 20 minutes or until the center comes out clean with a wooden pick.
- Let cool for 4 – 5 minutes in the muffin pan.
I can truthfully say that if you have ever planted a zucchini plant, you know that they do provide a lot of plants. I was also told once that zucchini could be the cure for world hunger. Ha ha! I think that people would get tired of it real fast. I wonder if that was what mana in the Bible was. Now there’s a thought.
Also, I just wanted to say that if you want your muffins a little healthier, you can put raisins in them instead of chocolate chips. You can also replace your oil with applesauce, and use half wheat flour, and you will have a most healthy muffin.

Here is a picture of my zucchini plant. It is big and beautiful. It just kept getting bigger and bigger and finally it did get a few zucchinis on it. I thought that they would never come and then my friend brought me one from her plant and it was almost like my plant found out and was jealous. Then all of a sudden it started producing zucchinis.
Now I can share with all of my neighbors. I guess I will have to go to church and see if anyone left their car unlocked. Of course it is a little risky now days because there are so many bells and whistles on cars. I could have the police showing up if I’m not careful. It isn’t worth going to jail just trying to get rid of a few zucchinis, I will just have to leave them on someone’s doorstep.
