  • Dice the cucumbers, and tomatoes, then place them in a larger bowl.
  • Chop the onion, parsley and pepper; add to the cucumber and tomato.
  • Next rinse and drain the chickpeas and add them to the bowl.
  • Add the oil, lemon juice, salt, pepper and the garlic salt.
  • Combine the mixture and serve.

  • 2 cups diced cucumbers

  • 1/8 cup chopped purple onion

  • 1 (15 ounce) can chick peas or garbanzo beans, rinsed and drained
  • 1/2 Tablespoons extra-virgin olive oil
