- 1 9" unbaked pie crust (make your own, or I like Marie Calendars in the frozen section)
- 1/2 cup butter, softened
- 1 1/4 cups sugar
- 3 Tablespoon all purpose flour
- 1/8 teaspoon salt
- 3 large eggs
- 1 cup buttermilk
- 1 Tablespoon lemon or lime juice
- 1 teaspoon vanilla extract
- (optional) 1/8 teaspoon cinnamon or nutmeg
Instructions
- Preheat the oven to 350 degrees.
- Mix the butter and sugar in a large mixing bowl until nice and creamy.
- Add the flour, salt and eggs; beat again making the mixture nice and smooth.
- Next add the buttermilk, lemon juice, vanilla extract, and cinnamon if desired.
- Pour the mixture into a 9" unbaked pie crust.
- Place a piece of foil onto a cookie sheet then set the pie on the sheet.
