Easter will soon be here and here is a yummy cookie that is perfect for this time of year. These fun carrots were in my garden and so I decided it was time to use them up. Talk about fresh and delicious.

With Spring on its way, carrots remind us of the new season when things are starting to blossom and the flowers are starting to grow.

Who can simply resist carrots, oatmeal, and cinnamon, topped off with cream cheese?

Cookies:

  • Butter
  • Brown sugar
  • Vanilla extract
  • Eggs
  • All purpose flour
  • Baking soda
  • Salt
  • Cinnamon
  • Carrots
  • Quick-cooking oats
  • Shredded coconut (optional)

 

Cream Cheese Frosting:

  • Cream cheese
  • Whipping cream
  • Butter
  • Powdered sugar
  • Vanilla extract

How Do I Make Carrot Cake Cookies?

Here’s the simple steps you’ll follow to make these cookies (scroll down for the full recipe):

 

Cookies:

  • With a mixer, blend the butter and brown sugar together until nice and smooth.
  • Add the eggs and vanilla.
  • Then add the flour, soda, salt and cinnamon; mix just to combine.
  • Slowly stir in grated carrots, oats, and coconut just to combine.
  • Using a cookie scoop or regular spoons, make dough into 1 1/2″ balls.
  • Cook @ 350 degrees for 12-15 minutes or until cookies start to brown.
  • Remove the cookies from the oven and allow them to cool.
  • You can eat them with or without frosting.

 

Cream Cheese Frosting:

  • With a mixer, mix the cream cheese, butter, and the cream.
  • Add the powdered sugar and vanilla extract and mix until nice and smooth.
  • If necessary add extra cream.
  • Frost cookies that have cooled.

They are easy to make and the cream cheese frosting with the cream mixed in, makes the frosting so creamy and delicious. I am pretty sure they are one of the best cookies ever!

Ingredients

Cookies:

  • 1 cup butter, softened
  • 1 1/2 cups brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 eggs
  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • 1/8 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups finely grated carrots
  • 1 cup quick-cooking oats
  • 1/2 cup shredded coconut (optional)

  • 4 ounces cream cheese, softened
  • 1/4 cup whipping cream
  • 1/4 cup butter, softened
  • 2 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
