Peach Cobbler cookies are perfect for this time of year with the peaches coming on.  Fall is a great time of year with all the fresh peaches and the apples. These cookies are a great way to use up a few peaches. 

Next time I make these cookies I am going to replace part of the flour with rolled oats. Then I was thinking about putting some crumble on the top and then they will really be peach cobbler cookies. You may also want to make some peach cobbler, and this can be done with fresh or frozen peaches.

How Do I Make Peach Cobbler Cookies?

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, place the butter and sugars and mix until nice and fluffy.
  • Add the egg and the extracts.
  • In a separate bowl, place the flour, cinnamon, cream of tartar, baking soda, salt and the nutmeg, then whisk them together, slowly; add them to the butter mixture and then stir in the peaches.
  • Drop the dough onto a baking sheet. Bake until the center of the cookies are done, which is around 12 minutes.

Ingredients

  • 1 cup butter, softened
  • 1/3 cup brown sugar
  • 1 cup white sugar
  • 1 large egg, @ room temperature
  • 1/4 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 cup chopped peeled fresh peaches

Notes

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, or mixer with a stand, place the butter and sugars and mix until nice and fluffy, I usually do about 3 - 5 minutes on medium speed.
  3. Add the eggs and the extracts.
  4. In a separate bowl, place the flour, cinnamon, cream of tartar, baking soda, salt and the nutmeg, then whisk them together, slowly add them to the butter mixture and then stir in the peaches.
  5. Using a cookie scoop or 2 spoons, drop the dough onto a baking sheet lined with a baking mat or parchment paper. Bake until the center of the cookies are done and the cookies start to turn golden brown, which is around 12 minutes.
  6. Allow the cookies to cool on the baking sheet for 3 - 4 minutes, then move them to a cooling rack and allow the cookies to cool before placing them into a air tight container.
