Classic Sugar Cookies are perfect for this time of year. They are fun to have for family and friends or you can turn them into a craft or project. I just love the softness of these cookies and I think that the little bit of almond flavoring makes them fantastic.
You will love the taste of these cookies and how much flavor they have. However if you want the cookies to keep their shape, you will want to put them in the freezer for about 10 minutes, or the fridge for 20 minutes before baking them.
I got this recipe from Tasty’s, and I hope you enjoy it as much as I do. I found that this recipe is soft from the inside out. There were no hard crunchy edges. They were also fun to decorate and they did hold their shape as long as I put them in the fridge or freezer for a few minutes.
And you are welcome to spend as much time decorating your cookies as you like. I did use butter cream frosting because I love the way the royal icing looks, but I love the way butter cream frosting tastes.
Butter cream frosting recipe that I used was 1 cup butter, 4 cups powdered sugar, 1 teaspoon vanilla extract, 1/2 teaspoon almond extract, and 4-5 teaspoons whipping cream, or regular cream. Mix together and it is ready to go, if it is too thick, add more cream.

How Do I Make Classic Sugar Cookies?

- In a large mixing bowl, place the butter, sugar and the cream cheese, then mix together.
- Next add the egg, egg yolks, vanilla and almond extract and mix well again.
- Add the salt, and sift the flour, baking powder, and cream of tartar into the bowl, and mix.
- Then shape the dough into a flat disc and wrap tightly in plastic wrap.
- Chill in the refrigerator for at least 2 hours or up to 3-4 days.
- Allow the dough to sit at room temperature for about 5-7 minutes, or just until the dough softens ever so slightly.
- Sprinkle a little flour on a smooth surface, and then roll out the dough with a rolling pin to about 1/4″ thick.
- Spray the cookie cutters with cooking spray or dip in flour. Using cookie cutters, cut out desired shapes.
- Place the cookies onto the prepared pan, chill for 20 minutes as this will help the cookies keep their shapes.
- Bake the cookies for 10-12 minutes, or until the edges start to turn golden brown.
- Cool completely on a wire rack before decorating.
- Frost with your favorite frosting.

Ingredients
- 1 1/2 cups butter
- 1 1/2 cups granulated sugar
- 3 Tablespoons cream cheese, softened
- 1 large egg
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 teaspoon salt
- 3 1/2 cups all-purpose flour, plus more for dusting
- 1/2 teaspoon baking powder
- 2 teaspoons cream of tartar

- Scrape down the sides of the bowl, to make the dough mix more evenly.
- Next add the egg, egg yolks, vanilla and almond extract and mix well again.
- Add the salt, and sift the flour, baking powder, and cream of tartar into the bowl, mix just to incorporate until the dough comes together.
- Then shape the dough into a flat disc and wrap tightly in plastic wrap.
- Chill in the refrigerator for at least 2 hours or up to 3-4 days.
- When ready to bake the cookies, preheat the oven to 350 degrees.
- Line a baking sheet with parchment paper, or use a baking mat.
- Allow the dough to sit at room temperature for about 5-7 minutes, or just until the dough softens ever so slightly.
- Sprinkle a little flour on a smooth surface, and then roll out the dough with a rolling pin to about 1/4" thick.
