I made some loaves of this pumpkin coconut bread to share with some of my neighbors just for a little fall treat. It went over very well. It is always fun to do something a little different. And it is always nice to receive a little treat when you are not expecting it.

How Do I Make Pumpkin Coconut Bread?
Here’s the simple steps you’ll follow to make this bread (scroll down for the full recipe):
- In a mixing bowl mix oil, eggs, and pumpkin until nice and creamy.
- Add sugar, flour, soda, cinnamon, nutmeg, and salt.
- Add the two boxes of cook and serve pie filling, mix thoroughly.
- If desired, stir in nuts.
- Put in 3 loaf pans that have been lightly greased.
- Bake @ 350 degrees for 50-60 minutes or until tester comes out clean.
- When done, turn out onto a cooling rack.
We had a neighbor when I was growing up that use to bring us treats every now and then, just out of the blue. I remember that neighbor fondly.
