What Ingredients Do I Need For Mint Brownie Cookies?

Cookies:

  • Butter
  • Brown sugar
  • White sugar
  • Eggs
  • Vanilla extract
  • Flour
  • Cocoa powder
  • Baking soda
  • Salt
  • Mini chocolate chips

 

Mint frosting:

  • Butter
  • Cream cheese
  • Mint extract
  • Powdered sugar

 

Chocolate Layer:

  • Chocolate chips
  • Vegetable oil or coconut oil

How Do I Make Mint Brownie Cookies?

Here’s the simple steps you’ll follow to make these Cookies (scroll down for the full recipe):

 

Cookies:

  • Cream together the butter and sugars.
  • Add the eggs and vanilla extract and mix.
  • Add the flour, cocoa, baking soda and salt.
  • Mix just to combine, then stir in the chocolate chips.
  • Make cookie balls.
  • Place the dough balls on the baking sheet.
  • Bake for 10-12 minutes.
  • Do not over bake the cookies.
  • Remove from the oven and allow the cookies to cool.
  • Transfer the cookies to a wire rack.

 

Mint Frosting:

  • Place all of the ingredients in a bowl, and with a hand mixer.

 

Chocolate Layer:

  • Place the chocolate chips and the oil into a micro wave safe pan and micro wave in 30 second intervals, until the chocolate is melted.
  • Put a good amount of frosting onto the cookies.
  • On top of the frosting, place some chocolate, and spread so that it forms a nice circle.

 

 

 

 

Tips and Tricks for Mint Brownie Cookies:

 

  • Double the batch if you like and need more than nine cookies. Or you can make the cookies smaller if you want to make more cookies.
  • One thing that I discovered is if you forget to press the cookies down, you can do it even after they are baked. Try and leave the cookie dough about 1″ thick when pressing the cookie dough down.
  • You can store these cookies in an air tight container in the refrigerator for up to five days! 

 

 

Can I Use a Chocolate Ganache for Mint Brownie Cookies?

 

  • You can also make a Chocolate Ganache if you like, but I find that it is a little easier to just add some oil to your chocolate and let it set up. (Chocolate Ganache recipe below if you want to use Ganache).
  • But you are good to try either way.
  • I do have Ganache on these cookies, but I think that I would prefer a little more chocolate on my cookies and I ran out.
  • Also, I put it in a plastic bag to place it onto the cookies because my frosting was mixing with my chocolate. 

 

 

Chocolate Ganache:

Ingredients:

  • 3 Tablespoons of heavy cream
  • 1/3 cup of chocolate chips

 

Instructions:

  • Place chocolate in a medium bowl.
  • Heat the cream in a small saucepan over medium heat until it begins to gently simmer.
  • Pour warm cream over chocolate; let it sit for 2–3 minutes to soften the chocolate.
  • Stir until completely combined and chocolate has melted.

Mint Brownie Cookies are a real treat. Chocolate cookies with mint frosting and a chocolate topping, make the perfect cookies.

Cook Time 12 minutes
Total Time 32 minutes

Ingredients

Cookies:

  • 1/2 cup butter, softened
  • 3/4 brown sugar
  • 1/4 cup white sugar
  • 2 eggs @ room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips

Mint frosting:

  • 2 Tablespoons butter, softened
  • 4 ounces cream cheese, softened
  • 1/4 teaspoon mint extract
  • 1 cup powdered sugar

Chocolate Layer:

  • 1/4 cup chocolate chips melted
  • 1 teaspoon of your favorite vegetable oil or coconut oil

Instructions

    Cookies:

    1. Preheat the oven to 350 degrees.
    2. Prepare a baking sheet with parchment paper or a silicone baking mat.
    3. Using a stander mixer, cream together the butter and sugars on medium speed for 2 minutes.
    4. Next add the eggs and vanilla extract and mix to combine.
    5. Add the flour, cocoa, baking soda and salt.
    6. Mix just to combine, then gently stir in the chocolate chips.
    7. Make cookie balls using a 1/4 cup or maybe just a little less.
    8. Place the dough balls on the baking sheet, six to a pan.
    9. Bake for 10-12 minutes depending on your oven.
    10. Do not over bake the cookies or they will be hard and crunchy.
    11. Remove from the oven and allow the cookies to cool on the baking sheet for 5-7 minutes.
    12. Transfer the cookies to a wire rack and let them cool completely.

    Mint Frosting:

    1. Place all of the ingredients in a bowl, and with a hand mixer, mix for 3-4 minutes.
