  • Lemon instant pudding mix
  • Baking soda
  • Baking powder
  • Salt
  • Eggs
  • Milk
  • Applesauce
  • Coconut oil or canola oil
  • Lemon juice

  • Poppy seeds

How Do I Make Lemon Zucchini Bread?

  • In a large bowl or a mixer, combine the flour, sugar, dry pudding mix, baking soda, baking powder and the salt.
  • Then add the eggs, milk, applesauce, oil, lemon juice and the lemon extract.
  • Mix the mixture until all of the ingredients are combined.
  • Fold in the zucchini, poppy seeds and lemon zest.
  • Pour the batter into 2 greased 9″ x 5″ loaf pans.
  • Bake at 350 degrees for 50-55 minutes.
