Lemon Zucchini Bread is the perfect recipe for this time of year. Now I am pretty sure that you have a neighbor that has extra zucchini. And if you are not sure what to to with it why not try and make some lemon zucchini bread?
I love the taste of lemon, and this bread is so nice and moist and loaded with flavor.
Also if you do not care for poppy seeds, you can leave them out, however I just love the way this bread tastes with them. Also you will barely see the little flecks of zucchini, in your bread.
What Ingredients Do I Need For Lemon Zucchini Bread?

- All purpose flour
- Sugar
- Lemon instant pudding mix
- Baking soda
- Baking powder
- Salt
- Eggs
- Milk
- Applesauce
- Coconut oil or canola oil
- Lemon juice
- Lemon extract (optional)
- Zucchini
- Poppy seeds
- Lemon zest
How Do I Make Lemon Zucchini Bread?
Here’s the simple steps you’ll follow to make this bread (scroll down for the full recipe):
- In a large bowl or a mixer, combine the flour, sugar, dry pudding mix, baking soda, baking powder and the salt.
- Then add the eggs, milk, applesauce, oil, lemon juice and the lemon extract.
- Mix the mixture until all of the ingredients are combined.
- Fold in the zucchini, poppy seeds and lemon zest.
- Pour the batter into 2 greased 9″ x 5″ loaf pans.
- Bake at 350 degrees for 50-55 minutes.
- Cool for 10 minutes and then remove from the pan and place onto a wire rack.
- Cool completely.
- Store the remaining bread in a plastic bag.
Can I Use Large Zucchini In Zucchini Lemon Bread?

- Just stay away from making salads with them.

Can Poppy Seeds Cause a Positive Drug Test?
- Poppy Seeds can contain high enough levels of the opioid to trigger a positive result on some types of drug urine tests.
- Even though most of the opium is removed from the poppy seeds during processing, sometimes, the seeds sold for use in foods still have a significant amount of opium – and thus morphine – in them.
- There is not enough to make a person “high”, but enough that could trigger a positive drug test result.
- For this reason most drug tests have been modified so that a positive result will not happen.
