What is Gelato?

  • Gelato is a popular frozen dessert of Italian origin.

Ingredients

  • 2 cups whole milk
  • 3 Tablespoons honey
  • 3/4 cup sugar
  • 2 1/2 cups (around 12 ounces) fresh strawberries, washed, stem removed and sliced in half
  • 1/2 cup heavy whipping cream
  • 1 teaspoon lemon juice

Instructions

  1. Place the milk, honey, sugar, and washed strawberries into a blender; cover with a lid and process until blended.
  2. While processing, slowly add the cream, just until the mixture is combined.
  3. Place the mixture into a bowl, and stir in the lemon juice, cover and allow the mixture to cool in the refrigerator for 4-5 hours.
  4. I also like to put the cylinder from the ice cream maker in the freezer for at least 30 minutes.
  5. Then add the mixture into the cylinder, make sure that the mixture is no more than 2/3 full.
  6. Process according to manufacturers directions
  7. If you have a small ice cream maker you may need to make 2 batches, as you need head space for the mixture to process. If this is the case, make sure to refrigerate the mixture until you are ready to put the mixture into the cylinder.
