- Chicken breasts
- Chicken broth
- Onion powder
- Garlic powder

How Do I Make Easy Chicken Rice Bowls?
Here’s the simple steps you’ll follow to make these Rice Bowls (scroll down for the full recipe):
- Place chicken breasts and chicken broth in a slow cooker.
- Add onion powder, garlic powder, chili powder, cumin, salt and pepper.
- Cook on high for 3 1/2 – 4 hours, or on low for 5 1/2 hours.
- When the center of the chicken reaches 160 degrees, shred the chicken.
- Add the black beans that have been rinsed and drained.
- Cook rice according to package directions.
- Place cooked rice in a bowl, and add the chicken mixture.
- Top with cheese and any additional toppings that you wish.

We had the opportunity to tend our grandson and his cousins this week end, while their families ran a race called the dirty dash! Now you ask what is the dirty dash? It is a military boot camp 5K, mud run obstacle course with a lot of mud!
Yep, I told my husband that I would support him in participating next year, he laughed and said “no thanks”. I guess growing up on farms, we had enough mud, moving sprinkler pipes.
Good for all those that went and supported this race, because the people that put it on did a fabulous job. I was amazed at how many people showed up for this race. I am pretty sure that it was over 1000 people. Can I Substitute Ingredients in Easy Chicken Rice Bowls?
You could substitute the following ingredients for any variety of that ingredient that you desire:
- Beans
- Cheese
- Rice
You could also substitute the Chicken with the following:
- Sweet and Sour Chicken
- Barbecued Chicken
And as it goes for me, I will stick to babysitting! Oh ya and if your kids under 13 years of age want to run the race, they have a race just for them called the Piglet Plunge. I am not sure how far that one goes, but I am pretty sure that race would be more my speed.
But I guess I will just have to leave that to the other brave souls out there. And yes, they did look like little pigs that rolled in the mud when they were done. I think I will just stick to cooking!

- Use your favorite dressing in place of the salsa, my family likes ranch.
- If you like kidney beans better, you can use them in place of black beans.
- I use Rose rice, but any rice will do.
- You may use any cheese that you like, as well.

Chicken Rice Bowls have a delicious Chicken Broth mixture mixed with beans that are served over a bed of rice. The ingredients can be switched out so easily to accommodate personal preferences.
