Crustless Quiche, is a delicious dish from my niece’s, (Michelle Wright) cookbook – “Whisk Me Away”.
This Quiche is a great dish for a main meal or even breakfast.
What Ingredients Do I Need For Crustless Quiche?
Here’s a list of ingredients you’ll need to make this quiche (scroll down for the full recipe):
- Eggs
- Half and half
- Cumin
- Smoked paprika
- Salt
- Pepper
- Chili pepper (optional)
- Green chilies
- Shredded cheddar cheese
- Corn tortillas
- Salsa
- Guacamole
How Do I Make Crustless Quiche?
Here’s the simple steps you’ll follow to make this quiche (scroll down for the full recipe):
- In a mixing bowl, combine eggs, half-and-half, cumin, smoked paprika, salt, pepper, and a pinch of chili pepper. Mix well and set aside.
- Spray a 9″ pie pan with olive oil or nonstick cooking spray. Spread half of the green chilis over the bottom of the of the dish.
- Cover chilis with 2 tortillas cut into four triangles.
- Spread 1 cup cheese on top of tortillas.
- Repeat with a second layer of chilis, tortillas, and cheese.
- Pour egg mixture over the top.
- Sprinkle with paprika if desired.
- Cook at 350 degrees F. for 35 – 40 minutes, or until a knife inserted in the center comes out clean.
- Cool 10 minutes, then serve with salsa and guacamole.
Ideas To Change Up Your Crustless Quiche:
- Add some diced ham, Cubed turkey or chicken, Cooked bacon or sausage, or any meat of your choice. I was thinking some shrimp would be amazing too.
- You might have small corn shells like I did, and so I used them whole. If you have large shells, cut them into fourths like the recipe suggests. Either way works great!
- Individual quiches can be made in ramekins or in muffins tins, filling 2/3 of the way full. Bake at 335 degrees F. for 25 -30 minutes
- This dish can be made the night before, refrigerated, and cooked in the morning.

- 1 (4 ounce) can of green chilies, divided
- 2 cups shredded cheddar cheese, divided
- 4 corn tortillas, divided
- salsa
- guacamole
Instructions
