Crust:

  • Oreo cookies
    Butter

 

Filling:

  • Hot water
  • Bitter sweet chocolate
  • Semisweet or milk chocolate chips
  • Cream cheese
  • Sugar
  • Regular Greek yogurt or sour cream
  • Vanilla extract
  • Eggs

 

Chocolate Whipped Cream:

  • Heavy whipping cream
  • Powdered sugar

How Do I Make Chocolate Cheesecake?

Here’s the simple steps you’ll follow to make this Cheese (scroll down for the full recipe):

 

Crust:

  • Place the Oreo cookies into a food processor and pulse until they are the consistency that you like for your crust. 
  • After the cookies are ground to the right consistency, place the melted butter into the bowl with the cookies and pulse just to combine the mixture. 
  • Place the buttered crumbs into a 9″ spring form pan. Pat the cookies down onto the bottom of the pan and a little bit up the sides of the pan. 
  • Place in the oven and cook for 10 minutes. 

 

Filling:

  • Place hot cup water into a microwave, then add the bitter sweet chocolate and the chocolate chips. Melt the chocolate for about 1 minute on power level 5. Stir the chocolate and repeat as necessary until the chocolate is melted.
  • With a stand mixer, mix the cream cheese.
  • Next add the sugar, and mix until the mixture becomes nice and creamy. 
  • Place the yogurt and the vanilla extract into the mixture and mix well. Add eggs one at a time, making sure that they are well combined.
  • Now you will want to add the melted chocolate to your mixture. Again making sure that they are all mixed together.
  • Place the dough onto the crust in your 9″ spring form pan.
  • Put your springform pan back onto your baking sheet again, and place it into the oven.
  • Bake the cheesecake for 20 minutes at 325 degrees. Then turn the oven to 300 and allow the cheesecake to continue to cook for 30-40 minutes more.
  • Next turn the oven off and leave the cheesecake in the oven for about 1 hour. This helps so that the cheesecake doesn’t crack. After the hour of resting in the oven, remove the cheesecake and allow the cheesecake to cool to room temperature before placing in the refrigerator.
  • Allow the cheesecake to cool for 2-3 hours or even overnight. Then you are ready to garnish with the chocolate whip cream, chocolates, grated chocolate, or whatever you choose to garnish with.

 

Whipping cream:

  • With a hand mixer, whip the cream until it has thickened.
  • Then add the powdered sugar, vanilla extract, and the sifted cocoa. Mix to combine.
  • Then use to garnish as desired.

Chocolate Cheesecake is so much tastier than any you can buy. It makes 12 pieces so that there is plenty to share.

Ingredients

Crust:

  • 20-24 Oreo cookies (regular)
  • 4 Tablespoon butter melted

Filling:

  • 1/4 cup hot water
  • 8 ounces bitter sweet chocolate
  • 1 cup cup semisweet or milk chocolate chips
  • 3 (8 ounce) packages of cream cheese, (room temperature)
  • 1 cup sugar
  • 1/4 cup regular Greek yogurt or sour cream
  • 2 teaspoon vanilla extract
  • 4 large eggs @ room temperature

Chocolate Whipped Cream:

  • 8 ounces of heavy whipping cream
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup cocoa sifted

Instructions

Crust:

  1. Preheat the oven to 350 degrees.
  2. Place the Oreo cookies into a food processor and pulse until they are the consistency that you like for your crust. I like to have a few chunks in mine.
  3. After the cookies are ground to the right consistency, place the melted butter into the bowl with the cookies and pulse just to combine the mixture. If you do not have a food processor, you can break up and smash the cookies with a rolling pin or the bottom of a cup.
  4. Place the buttered crumbs into a 9" spring form pan. Pat the cookies down onto the bottom of the pan and a little bit up the sides of the pan. Make it nice and even.
  5. Place in the oven and cook for 10 minutes. I like to place my pan on a baking sheet just in case some of the butter comes out of the pan. After you remove the crust from the oven, turn the oven to 325 degrees.

Filling:

  1. Place 1/4 hot cup water into a microwave, then add the bitter sweet chocolate and the chocolate chips. Melt the chocolate for about 1 minute on power level 5. Stir the chocolate and repeat as necessary until the chocolate is melted.
  2. With a stand mixer, mix the cream cheese, that is at room temperature.
  3. Next add the sugar, and mix until the mixture becomes nice and creamy. Make sure to scrape down the sides of the bowl so that there aren't extra chunks stuck to sides or bottom of the bowl.
  4. Place the yogurt and the vanilla extract into the mixture and mix well. Add eggs one at a time, making sure that they are well combined. Again scrape the sides of the bowl as to mix all the ingredients equally.
  5. Now you will want to add the melted chocolate to your mixture. Again making sure that they are all mixed together.
  6. Place the dough onto the crust in your 9" spring form pan.
  7. Put your springform pan back onto your baking sheet again, and place it into the oven.
  8. Bake the cheesecake for 20 minutes at 325 degrees. Then turn the oven to 300 and allow the cheesecake to continue to cook for 30-40 minutes more.
