Surprise Chicken Noodle Soup was introduced to me by my wonderful neighbor. One day she asked me if I ever put mashed potatoes in my chicken soup. I thought it was a weird idea, but decided to try it anyway. Everyone in my family really enjoyed it!
So there you go, the cat is out of the bag. Next time you have left over mashed potatoes, make chicken soup and in the bottom of the bowl, add a scoop of mashed potatoes. The potatoes make the soup so thick and creamy.
What Ingredients Do I Need For Surprise Chicken Noodle Soup?
Here’s a list of ingredients you’ll need to make this Soup (scroll down for the full recipe):
Soup:
- Cooked chicken
- Salt
- Onions
- Bay leaves
- Bouillon cubes
- Carrots
- Fresh Celery
- Egg noodles, or noodles of your choice
- Parsley
- Pepper
Mashed potatoes:
- Cook some of your favorite potatoes.
- After they are cooked, add some milk, and butter to make them creamy.
- Mash them all together. Add a little salt and pepper to taste.
How Do I Make Surprise Chicken Noodle Soup?
Here’s the simple steps you’ll follow to make this Soup (scroll down for the full recipe):
Soup:
- In a large kettle, place the water, chicken, salt, onions, bay leaves and bouillon cubes.
- Cover with a lid and bring to a boil. Cook on medium heat for about 30 minutes.
- Remove the chicken and shred it, set it aside.
- Bring the liquid back to a boil, then add the carrots and celery.
- Add the noodles and cook for another 10-12 minutes.
- Add the chicken and the parsley, sprinkle with about 1/4 teaspoon of pepper.
- Simmer for 15 minutes.
Mashed Potatoes:
- In the bottom of each bowl, place a scoop of mashed potatoes.
- Then add a couple of ladles of soup over the top of your mashed potatoes.
- You can mix it together in your bowl, or eat it how you like.
- All those bits of carrot, celery, and onion commonly found in chicken noodle soup are a great source of vitamins C and K, as well as other antioxidants and minerals.
- Not only does this help build a healthy immune system to fight off viruses, it also helps your body recover from illness more quickly.
Tips and Tricks For Surprise Chicken Noodle Soup:
- What kind of potatoes go best in chicken soup? We say any kind that you want, however, I have never used sweet potatoes. We love Russet, Reds, and Yukon’s.
- And don’t forget if you do not want to cook some chicken, you can always use a Rotisserie chicken.
- To plan ahead, cut up your vegetables the night before or morning of before cooking. That way it just takes minutes to put everything in the pot.

Surprise Chicken Noodle Soup has a scoop of mashed potatoes in the bottom of your bowl. The potatoes make the soup so thick and creamy.
Ingredients
Soup:
- 3 cups cooked chicken, I use 2 Large breasts
- 10 cups water
- 3/4 teaspoon salt
- 1/2 medium onions, or 1 1/2 Tablespoons Dried Onions
- 2 bay leaves
- 6 chicken bouillon cubes
- 1 1/2 cups carrots, chopped
- 2 cups fresh chopped celery
- 1 (16 ounce) bag Mrs. Weiss egg noodles, or noodles of your choice
- 1 Tablespoon chopped fresh parsley or 2 1/2 teaspoons dried parsley
- 1/4 teaspoon pepper
Mashed potatoes:
- Cook some of your favorite potatoes.
- After they are cooked, add some milk, and butter to make them creamy.
- Mash them all together. Add a little salt and pepper to taste.
Instructions
Soup:
- In a large kettle, place the water, chicken, salt, onions, bay leaves and bouillon cubes.
- Cover with a lid and bring to a boil. Cook on medium heat for about 30 minutes or until the center of the chicken reaches 160 degrees.
- Remove the chicken and shred it or cut it into smaller pieces, set it aside.
- Bring the liquid back to a boil, then add the carrots and celery.
- Add the noodles and cook for another 10-12 minutes, or until the noodles are done.
- Add the chicken and the parsley, sprinkle with about 1/4 teaspoon of pepper.
- Simmer for 15 minutes.
Mashed Potatoes:
- In the bottom of each bowl, place a scoop of mashed potatoes.
- Then add a couple of ladles of soup over the top of your mashed potatoes.
